As a mexican chef the nachos has to have lots of cheese especially the yellow cheese which is the classic, you can also use any variety of cheese and you can add jalapeños.But it you want more than just cheese you can make your nachos with any kind of beef or carne like carnitas,carne asada,pollo asado,mariscos(aguachile) any tpe of nachos with stacks of ingredients( besns,guacamole,sour cream, cheese,etc...)You can even mske them the way you want them as long as you have the tortilla chips of any kind present with lots of cheese.
Unless you have some very fatty mince meat, do not drain "the fat". By doing that you're literally pouring the flavour out of the meat and down the drain. Just a get a good quality lean mince meat and let those juices cook down until there's none - or very little - left in the pan.

I would mix the cooked and seasoned rice at the end of the beef cooking, after it is drained! Or just sprinkle it on right after the beef. And I personally just spoon on a little bit of sour cream to each bite!
But if you want to make the sour cream drizzle, just add 1 part water to 3 parts sour cream. Basically you are just thinning it out, you can use milk too to keep the flavor, and just add to a squeeze bottle
I just made this recipe but substituted the meat with tempeh and it was delicious!!!!!! My family absolutely raved about how tasty it was and they want me to make it again real soon. Thank you for this excellent recipe.

I am practically an expert at natural making since I do it every three days. It is my obsession and favorite food. I can tell you that a really good nacho just needs cheese and chips. All the cheeses had to be hand shredded no cop outs. You have to know the melting point and not burn it either.

Nachos look awesome...deserves a better beer. 😀 I bought a beautiful pizza pan many years ago thinking I'd give homemade pizza a try. Well, that didn't happen but I do use it to bake and serve nachos very similar to these. I still serve the sour cream on the side. Another excellent Delish video. 👍
Looks so tasty! Being vegetarian, I would sub Morningstar Farms Crumbles for the meat and make sure my refrieds were veg. Love how you topped them out with the sour cream, avo, tomatoes and cilantro!
Just some tips The fat that was rendered from the ground beef should have been drizzled on the tortilla chips(totopos).. Would have made the chips crispier... That fat could have also been used on the refried beans.. I didnt see cumin seed unless it was in the taco seasoning... Cumin should have been used to condiment the avocados with lime... Or made a molli with the avocado Lime has better flavor over lemon Instead of sour cream.. Use jocoque(mexican cream) which is available nationally now... Use spring onion or Mexican onion...with stocks...much much better flavor.. Could have added olives.. Love your videos... Very simple and easy to follow
