3 SIMPLE MEALS for the New Year | What YOU can eat in a day

  • Hi Guys! If you're trying to think of ways to eat better or change things up for the new year, here are some of my favorite meals lately.
    Chocolate Peanut Butter Overnight Oats
    1 tablespoon chia seeds
    1 tablespoon cocoa powder
    pinch cinnamon
    2 teaspoons maple syrup
    1/2 cup yogurt
    1/2 cup milk
    1/2 cup rolled oats
    In a bowl, combine the chia seeds, cocoa powder, cinnamon, maple syrup, and yogurt. Mix well and then add the milk and rolled oats. Mix again and leave in a bowl, cover, leave in fridge overnight. If you want it to soak faster, use quick oats and soak for at least 2 hours.
    In the morning, you can add strawberries, peanut butter, or your favorite toppings.
    Rice bowl in a roll
    Miso mayo sauce
    1 tablespoon red miso paste
    1 tablespoon soy sauce
    2 tablespoons mayo
    2 teaspoons minced ginger
    2 teaspoons sugar
    1 teaspoon rice vinegar
    In a bowl, combine the ingredients into the bowl and mix. Set aside.
    To make the roll, add a sheet of nori / seaweed, add white rice and flatten it out. Add the miso sauce, your favorite protein - salmon, chicken, tofu, beef, whatever you want. Add some greens, cabbage, carrots, whatever veggies you have and roll it up.
    Sausage and Mushroom creamy pasta
    1 tablespoon olive oil
    4-5 garlic cloves, minced
    1/2 lb italian sausage, casing removed
    1 cup sliced mushrooms
    1/2 cup mushrooms
    1/4 cup chicken broth
    1 cup mascarpone cheese
    1 cup arugula
    8 oz pasta, cooked
    Cook the pasta according to the package's directions but under cook it by 1 minute. Drain, save some pasta water, and set aside.
    In a large pan, add olive oil and add the garlic. Next, saute the sausage and break it up into small crumbly pieces. Once it starts to brown, add the mushrooms and continue cooking for a few minutes. Deglaze the pot with some chicken broth and add the mascarpone cheese. Add the cooked poasta and close the lid for a few minutes. Halfway through just stir it up and let it continue cooking. If it's not looking super creamy, add a little bit of the pasta water. Turn off the heat and add more parmesan cheese and arugula. Mix and serve.

    I’ve been a subscriber for a bit and I’ve noticed that you haven’t lost any of your personality, style or creativity but really refined it and also changed in places that made sense to who you are.     Thanks for the hint on equal parts milk, yogurt, and oatmeal to the overnight yogurt. I think it'd taste great with cherries and maybe toasted almonds. And that sushi does remind me of a spring roll. I got miso a few days ago but went with white and what I assume is yellow miso based on color since the label was all in Japanese, but watch it be a darker white miso and now I have miso out the wazzoo. Dummy here should have gotten the one labeled white and red mix. LOL!

      oooh cherries and toasted almonds would be amazing!! yes! spring rolls - i should make the peanut dipping sauce with this next time. haha i hope the miso works out for you. so many yummy things to make with it tho! 😊😊

      @@honeysuckle I saw someone use miso in congee! I'm like, "Whoa...!!" So I may try that although my chao ga is already fabulous. In fact, I'm writing up a recipe for two friends from the Pepper Lovers community. One is half Viet and lives in CA the other is a new buddy I made from a Khang Starr livestream today on peppers. LOL! The Scottish person is not familiar with pho, so I promised to send a cheat recipe using rotisserie chicken and since I use the same broth for chao go, I'm gonna introduce her to that, too. Not sure how congee with go over as some peeps don't like the texture. :)

    That roll looks good, but I would probably substitute the cabbage with spinach or different kinds of lettuce. I keep matchstick/shredded carrots in my veggie drawer as a staple since I use carrots for cooking so much, and my sister and I both have carpel tunnel so cutting veggies can be hard for us. The pasta dish looks SOOO good, unfortunately, I would only be able to cook it for half of my household due to mushroom allergies.

    Do you have any simple recipes that only uses the oven? I avoid using the stove to fry and all because my entire house gets really oily easily even when I'm using like a teaspoon of oil

    Instead if Cocoa powder, can we substitute it with Matcha powder? Does it still go well with peanut butter or what do you reckon?
