Usually, you should expect a fan service concert to be exciting. I was also one of the people who love to hear a concert without any other noise. But when I join a Final fantasy concert, when FF7 music was playing, the whole audience cheers, even I can't control myself.
I finally found where the Bolton theme comes from, since I couldn't find it anywhere in the soundtracks. It's from the ending of this scene ua-cam.com/video/FN-pP4lJ2-g/v-deo.html between Ramsay and Roose Bolton. In this medley it's sped up 1.25x. I don't know if it has a name, though.

People cheer because it hypes up the musicians playing and it is very exciting to hear soundtracks you love live.
