@@steptanm thanks! 😊 I know it's not a diet, it's more of a lifestyle. I'm not doing it as a diet to lose weight or anything, it's just something I've wanted to try out for a while. I'm a meat lover so I don't intend on going vegan for too long.
@@shehasthoughts Im also a lover the taste of meat, but luckily as a vegan that itch is scratched by the most amazing products. Food like seitan, soy and other protein sources can mimic it almost perfectly. So hopefully you will enjoy it, and maybe stay vegan for the animals 🐷🐮🐣

This makes me so happy! I’m not sure if I could ever go full vegan but I slowly but surely try to eat as little animal products as possible! I don’t eat beef, pig, cheese, and I try to avoid all dairy but ice cream is so good! I love how easy and simple these recipes look and it makes me excited to bake more vegan foods in the future💖

10-MINUTE VEGAN MUG BROWNIE
INGREDIENTS
4 tablespoons all-purpose flour
3 tablespoons brown sugar
3 tablespoons granulated sugar
4 tablespoons cocoa powder
½ teaspoon baking powder
Pinch of kosher salt
4 tablespoons water
2 tablespoons vegetable oil
¼ teaspoon vanilla extract
1 tablespoon vegan chocolate chips
Vegan ice cream, for serving
PREPARATION
In a small bowl, combine the flour, brown sugar, granulated sugar, cocoa powder, baking powder, and pinch of salt and mix with a fork until combined.
Add the water, oil, and vanilla. Mix until combined.
Spoon the batter into a wide 8-12 ounce mug.
Microwave on high power for 1½-2 minutes, until risen, watching to make sure it doesn’t spill over the sides of the mug.
Remove from the microwave and immediately scatter the chocolate chips on top. Let sit for at least 5 minutes to allow the chocolate chips on top to melt and the brownies to cool. Let cool completely for a denser brownie.
Serve with vegan ice cream.

Nonstick cooking spray, for greasing
1 cup granulated sugar
½ cup brown sugar
2 teaspoons vanilla extract
½ cup pumpkin purée
½ cup unsalted vegan butter
1½ cups vegan mini semisweet chocolate chips, divided
1 cup all-purpose flour
½ cup almond flour
⅓ cup cocoa powder
½ teaspoon baking soda
1 teaspoon kosher salt
PREPARATION
Preheat the oven to 350°F (180°C). Grease a 9-inch square baking dish with nonstick spray and line with parchment paper.
Add the granulated sugar, brown sugar, pumpkin purée, and vanilla to a medium bowl and mix for 1-2 minutes, until the sugar is mostly dissolved.
Add the vegan butter and 1 cup mini chocolate chips to a large, microwave-safe bowl. Microwave on medium-high power for 1-1½ minutes, until the butter is completely melted, then let sit for 3 minutes before whisking together to combine.
Pour the sugar mixture into the chocolate mixture and stir to combine.
Sift the all-purpose flour, almond flour, cocoa powder, baking soda, and salt into the bowl with the wet ingredients and fold with a spatula to incorporate. Fold in the remaining ½ cup mini chocolate chips.
Spread the batter evenly in the prepared baking dish and smooth the top with a spatula.
Bake for 32-35 minutes, until a toothpick inserted in the center comes out with a few moist crumbs attached. Do not overbake.
Let the brownies cool completely before cutting.

1 cup brown sugar

¾ cup coconut cream (do not shake can; use solids)
1 tablespoon vanilla extract
2 cups vegan dark chocolate chips
1 heaping tablespoon espresso powder or finely ground coffee
¾ cup coconut oil
2 cups all-purpose flour
½ cup dark cocoa powder
1½ teaspoons kosher salt
1 cup dark chocolate chunks or chopped dark chocolate
4 cups ice
Water, as needed
Peanut Butter Caramel
1 cup natural creamy unsalted peanut butter
½ cup maple syrup
1 tablespoon coconut oil.
½ teaspoon kosher salt
1 teaspoon vanilla extract
Chocolate Topping
⅓ cup vegan dark chocolate chips
½ teaspoon coconut oil
Special Equipment
Large roasting pan
PREPARATION
Add the granulated sugar, brown sugar, coconut cream, and vanilla to a large bowl. Mix for 1-2 minutes, until the sugar is mostly dissolved.
Add 2 cups dark chocolate chips and espresso powder or ground coffee to a medium metal or heat-safe glass bowl.
Melt the coconut oil in a small skillet over medium heat. Add the finely chopped walnuts and reduce the heat to low. Simmer for 5-7 minutes, stirring occasionally to prevent burning, until the oil has a strong nutty aroma and the walnut bits have browned slightly.
Carefully pour the walnut oil mixture over the chocolate chips. Let sit for 2-3 minutes to melt the chocolate before mixing together.

Sift in the flour, cocoa powder, salt and salt. Mix until just combined. Add ⅔ cup dark chocolate chunks and mix to distribute evenly. The batter will be thick.
Grease a 9-inch square baking dish with nonstick spray and line with parchment paper. Spread the batter evenly in the prepared baking dish. Cover the pan with foil and place in the refrigerator at least 8 hours, or overnight, to let the flavors develop.
When ready to bake, preheat the oven to 350°F (180°C).
Remove the brownies from the refrigerator, uncover, and transfer to the oven. Bake for 35 minutes, until the edges have crisped and the center is set. Do not overbake.
Remove the brownies from the oven and place in a large, deep roasting pan. Carefully add ice to the roasting pan around the brownie pan, then pour water into the roasting pan to reach ½ inch from the top of the brownie pan, being careful not to overfill. Let the brownies rest in the ice bath for 30 minutes. Alternatively, cover the pan with aluminum foil and carefully place in the freezer for 30 minutes.
While the brownies are in the ice bath, make the peanut butter caramel: Add the peanut butter, maple syrup and 1 tablespoon coconut oil to a small saucepan over medium heat. Warm 3-4 minutes, stirring constantly, until smooth and bubbling around the edges. Remove from heat and stir in vanilla extract and salt.
Remove the brownie pan from the ice bath or freezer, place on a towel on your work surface to dry. Pour the peanut butter caramel over the top of the brownies. Use a spatula or knife to spread until even.
Make the chocolate topping: Microwave ⅓ cup vegan dark chocolate chip and ½ teaspoon coconut on high heat 1 to 1 and a half minutes, stirring every 30 seconds, until smooth.
Use a spoon to drizzle the topping over the peanut butter caramel. Use a butter knife or chopstick to marble the chocolate through the caramel.
Place in the refrigerator for at least 4 hours to let the brownies set completely.
Use the parchment paper to carefully lift the brownies out of the pan onto a cutting board. Carefully slice into even pieces.
Eat cool, at room temperature, or warm in the oven or microwave for 30 seconds on high power.

My goal for 2021 is to totally change my diet to completely Vegan by the end of this year! This makes me feel better about still being able to make amazing plant based treats!!
I made the 1 day brownies today - SO WORTH IT! Definitely warm them up before eating, it pushes them from 10/10 to 100/10. Although there is a lot of time in the fridge or freezer, the actual cooking time that requires human input is about the same as a normal brownie batch made from scratch.
I followed the recipe and it was sooo oily that it was disgusting I couldn't eat it, if you're going to do it put much less oil 🤢🤮

Oooh yes, coffee in brownies just raise them to another level. It doesn't taste like coffee, but like - MORE chocolate. It's amazing. So definitely add instant coffee or even freshly brewed coffee in your brownies guys. You can either replace a liquid (like in the mug one where Merle used water). Thank you for sharing this! I make chocolate cupcakes similar to the middle recipe. I use a box of devil's food cake mix and 1 can of pumpkin mix and put in the pan. Now I wanna try it with the brownie mix bc mmmm brownies lol
