  • Hello Friends! Welcome to Claudette Rose Caribbean & Soul Cooking! Today I am making a traditional Trinidadian sponge cake.
    In this video, I’ll show you how to make a perfectly fluffy Trinidadian Sponge Cake, a beloved traditional Caribbean treat. This classic recipe is incredibly light and airy, with a delicate sweetness that will have everyone asking for seconds. It’s perfect for any occasion, whether it’s a family gathering or a special celebration!
    (This recipe makes 2 small cakes, I doubled the recipe for 3 large cakes)
    🌟 Ingredients:
    • 1 pound all-purpose flour
    .4 teaspoons baking powder
    • 1 pound sugar
    • 1 pound butter, softened
    • 10 eggs
    • 1 cup evaporated milk
    .1 tablespoon each mixed essence, lemon extract, and vanilla extract
    .1 tsp lemon zest and 1 tsp lime zest
    .1/2 tsp nutmeg
    .2 tsps each pumpkin pie spice, cardamom powder, cinnamon powder
    📋 Instructions:
    1. Preheat your oven to 350°F (175°C) grease and line cake pan.
    2. Cream together the butter and sugar until light and fluffy.
    3. Add eggs one at a time, beating well after each addition.
    4. Mix in vanilla extract, mixed essence, lemon extract
    5. In a separate bowl, sift together flour, baking powder and spices
    6. Gradually add the dry ingredients to the butter mixture, alternating with milk, until just combined.
    7. Pour the batter into the prepared pan and bake for 1 hour, or until a toothpick inserted into the center comes out clean.
    8. Let the cake cool before serving.
