TRADITIONAL RED ENCHILADA SAUCE
*Red Enchilada Sauce*
8 dried guajillo chiles (55 g)
small piece of onion
1 clove of garlic
2 tsp (7 g) chicken bouillon powder
salt to taste
1 1/4 to 1 1/2 cup water or soaking liquid
**Makes 1 3/4 to 2 cups of sauce
ENCHILADA CHILI GRAVY SAUCE
1/4 cup (59 ml) cooking oil
1/4 cup (35 g) all-purpose flour
2 Tbsp (12 g) chili powder
1/4 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
1 Tbsp (10 g) chicken bouillon
2 cups (473 ml) water
**Makes at least 2 cups of sauce
WHITE CHICKEN ENCHILADAS
INGREDIENTS
1 lb cooked shredded chicken
12 oz shredded cheese
16 corn tortillas
9 x 13 baking dish
* CREAM SAUCE*
5 Tbsp unsalted butter
5 Tbsp all-purpose flour
2 cups chicken broth
8 oz sour cream
4 oz can of chopped green chiles
salt and season to taste

I lived outside of Chicago , I use to get my tamales at Chiquitas. I loves the por and chicken ones. 412 dz. I would heat them and put fried eggs on top. I’m in Maine, I have 6 tamales left…I need to find a Mercado here. Corn is my favorite tortilla.😊

These were not your instructional video's. I am hoping to be able to piece together what I need. Years ago we had a restaurant called CHI CHI'S and my favorite was the cheese and onion enchiladas I am hoping to get close to that recipe. Thanks for the video and I still love your Korean videos also.

I’m having trouble with the picture format. It’s very cut off around the edges and won’t cover my screen. Very distracting. Maybe it’s just me, but all the other stuff I’m watching on UA-cam is fine.
Angelica I'm wondering if you make all your own corn tortillas or if there's a particular brand that you buy. I've tried so many times to soften them in oil and roll them like you do, and they ALWAYS break. Maybe I'm not using the right oil? Usually when I first roll them to put in the pan they break, but even if they make it into the pan OK, they break while they're sitting there. Any suggestions?

I don’t like UA-cam shorts. The portrait mode is unbearable for me and many other older people. And there is simply not enough information in the things for me to grasp what’s going on. My husband and I watched part of this but we couldn’t tell if it was different recipes or the same one again and again or when anything started or ended..lt seemed like you were just trying to get a video of a certain length based on what UA-cam seems to want. Imo this kind of shorts compilation isn’t my thing. Though I see many very similar positive comments, I am certain I’m not the only person who didn’t like it at all.
I love your videos but, UA-cam must be offering some kind of deal for using this format. There are so many of my channels that are doing some of their videos like this. I do not like it. It boxes in the video making it too small to see properly. Please listen to your subscribers and stop this format. I have seen several other complaints about this so I'm chiming in. From now on, if I see this format I will not watch it. Not trying to be a troll.
