One of my favorite dishes to make. So many variations. My 2 favorites are using ground beef onions and bell peppers with rice and provolone cheese in the stuffing and cook it in a provolone and white cheddar bechamel sauce. And the other is traditional stuffing and cook in a chicken broth with butter and olive oil and sauteed bacon.
Mine are a little different but my family loves them . As they freeze so well I make a big roaster full whenever I make them . I use 2 parts very lean ground beef and 1 part ground pork uncooked . Adding browned up onion , garlic and diced mushrooms . My rice goes in washed and uncooked . Then I add 2 raw eggs to the mixture . season well and mix . I put 1 jar of sauerkraut in the bottom of the roaster , place my cabbage rolls over this in 1 layer then add 1 28oz can of crushed tomatoes and layer until my big roaster is 3/4 full . On top of the last layer of crushed tomatoes I use another jar of sauerkraut and cover with leftover cabbage leaves and 2 fresh bay leaves . Into the oven it goes at 350 degrees for 2 1/2 hours . Then I turn the heat down to 200 degrees and cook an additional 4 hours . I also serve with sour cream . Depending on the size of the leaves I usually make 100 to 125 cabbage rolls .
This is a dish similar to what my mother made when I was growing up in the 70s and 80s. I use to be soooooo jealous of my friends who got to eat McDonalds for dinner…and yet…I wouldn’t have it any other way now. You make such great food and I’m glad you post your videos!
I'm trying this right now!!!! Thank you for showing how to unwrap the cabbage, everyone else said to take out of pot and just unroll the leaves. But unwrapping them in the pot as water is boiling sure worked great!! And your definitely correct about cutting the backbone off the leaf rolled up perfectly. I bake them in 9X13….. put carrots and onion on bottom then rolls on top sauce and tin foil cover bake 2 hour they are delicious. My Polish Gram taught me.
I don't cut out the hard part on the leaf, I usually shave it down to the same thickness as the rest of the leaf and there are less holes for the goodies to fall out. I love cabbage rolls, thanks for the reminder to make some, I just got a head of cabbage for fried cabbage but I think I am going to make cabbage rolls instead.

I think I'm gonna make these soon though, got some ground sausage I need to use up and that seems like it'd go perfect! Could even be a good way to use up some leftover turkey next year as well, mince some up and maybe throw in some mushrooms and quinoa, use chicken or turkey broth, probably only need an hour or so to cook though.
Pretty much the same recipe I use. It's delicious! I remove the cabbage rolls from the broth. Then I mix some flour with the sour cream, and thicken the tomato broth. Total yum!
These look beautiful and you prepared and rolled the cabbage leaves just the way my Hungarian Grandma Elaine taught me. She also layered her stuffed cabbage with sauerkraut and whole canned tomatoes crushed by hand, cooking hers on the stovetop. I think you might like the addition of sauerkraut!

I would add about a half cup of finely diced celery to the filling and I finish the top of it with a can of saurekraut before it goes in the oven. I make a huge batch and cook them in a large lasagna pan. The kraut also makes sure the rice on the top rolls get cooked. Absolutely sublime peasant food , so good!!
I just made 26 cabbage rolls! They're cooking in my crockpot, IN MY GARAGE, because my husband HATES the smell of cooking cabbage. He doesn't particularly like stuffed cabbage, but will eat at least the inside meat! My recipe is from my mom, with no measurements! She raised 9 kids, and always cooked by eye and taste. I added some shredded carrots I had in my freezer, to add a little sweetness and make the meat go farther. It's a cold, windy day, so I'm looking forward to eating them for dinner!
we have the same kind of food in Iran😅 more rice less meat. we also use grape leaves and bell peppers just like cabbage leaves. I suggest Greek yogurt as a side 😁
I also add a couple of slices of bacon on top with dollops of sour cream before I put in the oven. Also I use a can of tomato soup w/ a can of water and I mix the beef mixture with Lipton onion soup (dry) and add 1/3 lb. JD Sausage. Next time I will try your tomato sauce. Thx!
My grandmother used to make cabbage rolls. I haven't had them in forever. She always made her sauce with tomato soup, I think because it was a little sweeter.
I love the Worcestershire sauce it just adds so much flavor to so many things but anyway it's just it just gives a good flavor and everything it's kind of expensive but it actually is really really good and it helps a lot with a lot of stuff
I absolutely love cabbage rolls!~ while growing up, my mother would make an easy sauce which was one tin of Campbell's Condensed Tomato soup along with Campbell's Condensed Cream of Mushroom soup and I believe she either added water to that or milk ... now as an adult, I add a shredded potato to the meat mixture and does that ever keep the cabbage rolls nice and moist :)
My grandma used to make stuff cabbage when i was a kid, didn't think id miss them then but for the last few years ive had a hankering. There's a polish deli not far from me that serves them. One day im hitting that deli up, get me some homemade perioges too!
If you want to give this dish a Polish spin (golubki), skip the Worcestershire and season the sauce with a couple of bay leaves, a few allspice berries and several black peppercorns. Also in the Polish style you can omit rice and use dry breadcrumbs to bind the meatballs.

When cooking on stove top. I save cabbage water pour on top of cabbage rolls first put strips of bacon crisscrossed on bottom of pot. Pour a can of tomato soup on top fifteen minutes before done. Only need to dimmer for forty five minutes.

Question, I too use uncooked rice but many recipies say to put in cooked rice...what is the difference? I would think the cooked rice would end up gummy. Anyway, thank you again and Merry Christmas.
Love your channel! I was a bachelor and Eternal Student, marrying later in life. During my time at various Unis, I was befriended by many people from the Subcontinent. I learned many foodways from them, and this was one of my favorites, although I Southernized it, to a degree (Use Country Sausage as filling, for example) Anyway, will be watching! Cheers!
When I was a little girl, the lady across the street would babysit me from time to time. And when I was with her, she’d teach me to cook. This was one of the things we made together. She was from Poland and she put sauerkraut and fennel on the bottom and the top to keep the rolls moist. I haven’t thought about this for a while, but it really sounds delicious.
I love cabbage and my husband is is he is from Ukraine and Poland I mean his heritage anyway he always said he hated cabbage but I love cabbage anyway I'm trying to get it back to cabbage and he's he's he's getting back to it little by little and it's so good I'm sure I can do it with this recipe thank you

I just wanted to stand there eating them all right out of the pan haha Can't have white rice anymore and I didn't have any brown rice ready, but cooked quinoa worked great instead, plus it's super healthy. This will definitely be made again! AND, I was recently able to get the cookbook (loving it!) and I've added this recipe to the blank pages in the back ❤❤
My family has been bugging me to make these, we really love them. But its a lot of work🙈 I do always cook the rice before adding it to the filling, but otherwise pretty much the same recipe. They are so lovely and after seeing this I think I just have to make this tomorrow! I do admit, sometimes when I crave this, but im being lazy, I just cook and cut up the cabbage, mix everything in the pot and cook it that way 😅😅

I make my sauce thicker and add LIQUID SMOKE in it. Oh mama Mia! TO die for!

We lay lamp chops in the bottom of the rolls and let them cook together..try adding dried mint to the tomato sauce.. Very delicious 😊

You can submerge it using a Molcajete. That's what I use for my tamale leaves when letting them soften.

don't cut out the rib, cut the rib thinner, flush with leaf, then it will roll nicely and you have an intact leaf
