SPOT ON!! shell pulled away from flesh, and they were seasoned perfectly. I had my brother telling me to "Season the water." But I held fast and did it your way. I'm a convert now. Never thought to boil my shrimps without seasoning but its legit. Cool the boil off and pull them when the absorb the seasoning like you like them. Same with crawfish. Never thought a Yankee (north of I-10) would learn me the boiling.

You addressed burning the seasoning without addressing burning the seasoning... That's good not many people understand that about biols. Also you will get some seasoning form that sausage the good stuff will leach some of its good into the water as it biols. I would probably pass on the jalapanos but only because I'm the only one in fam that can take them so I would offer a side of spicy formation picked veggies (of would include peppers)
