    I keep my starter in the fridge until I need to make bread. I bring it out and feed it and it is usually very active after 1 to 2 hours. Thats when I put my ingredients together and start my bread process. My bread is turning out better each loaf I make. THANK YOU MARY!

      @@dct1238 I do. I feed it, let it get active, and it goes int he fridge. I use it straight from the fridge until it needs fed again. Some people prefer to feed it prior to using it in a recipe. I just use it cold. It's up to you, really.

      I took my starter out of the fridge tonight to feed to bake a loaf of bread tomorrow. It smells very hoppy like beer. Is that a normal smell? Thank you.

      @cindywoods4645 That sounds about right. I call it a yeasty smell. Sometimes, it will get the beer like smell after it has peaked and a little hungry.

    Thank you so much for this great advice! I started my first one last week, made sourdough pancakes today, but haven’t gotten nerve enough to do bread, but now I feel more confident going forward with the sandwich loaf rather than the artisan bread!

    Test in cold water till you remember what it looks like. Like fudge making, it floats

    Humidity is my baking enemy. I've been learning what are the signs of an active starter (I do a float test) , how the dough should look and how it should feel. In many occasions the water flour ratio has to be adjusted. I'll keep practicing. 😊

    Hi Mary - thank you so much for your advice and tips on starting a sourdough starter - it has gone very well - my starter was very boisterous and after about 11 days I felt that I could do a loaf! It’s proving as we speak and after 24 hours I’m hoping to have a loaf or might be even two😂

    Baking my first sourdough loaf today it sat for about eight hours did rise some I formed it into a ball and put it in a Pullman pan making the easy sourdough sandwich bread so now it is sitting for 2 to 3 hours to see if it rises to the top it has a long way to go I don’t think it’s gonna make it that far, lolHope it comes out all right, Love your videos by the way I made my sourdough starter watching you😊

      The first few loaves usually don't rise quite as big but they keep getting better every time you make one. Thank you so much!

      @@marshaduggan9268 It is a longer bread pan with a lid. It makes a loaf similar in size and shape to those in the grocery store. Long and flat on top.

      I don't have a "schedule". What I do is just use my starter straight from the fridge until the jar is almost empty. I take the jar out of the fridge, feed it, let it get active and then back in the fridge. For me, I feed 1-2 times a week depending on how many recipes I am making. Thanks so much for watching!

    I love your videos. Your techniques are effective and easy, just what I need I can’t do all that measuring and babysitting. I tried getting a starter up and running by following the measuring out grams and discarding. It was too much work and I failed. I’m back at it ( I don’t give up ) and using your method. It’s Day six and I see a few bubbles and the smell is wonderful. It’s cold in my house so I have been patient.. ❤ Thank you so much. I’m hoping I’ll be able to bake in the next couple of days…

    I know this is an older post, but I started my starter 7 days ago and well, it hasn't reached the point that yours had on another video I watched of yours. I have it in my oven with the light off and it is staying at 68 degrees so maybe that is why it is taking longer. It smells good. Any pointers? Just keep going and be patient? So glad I found your YT channel. I enjoy it.

      Yes, keep going. You can also add a few raisins to get it going quicker and then remove them when it gets good and active.

    Hi. I have 3 multiple part questions.
    1. When I move the starter to the fridge, am I still supposed to discard and feed it every 24 hours? Or just feed? Or just discard? Or leave it until I use it?
    2. After I use some to make a loaf do I start the discard/feed cycle again? In the fridge or back on counter?
    3. When do I start keeping my discard? Does the discard also get fed or just pile up in a second jar until I accumulate enough to use it in a discard recipe? Is it kept on counter or in fridge?

      I'm going to link a video of me actually using my sourdough starter for a week. Once your starter is active and being kept in the fridge, there is no more discarding. You use the starter straight from the fridge until it needs fed again and then feed it, leave it on the counter to become active, and then back in the fridge.     Rubber band where level of feeding is; it rises up twice level when active. But is that necessary before using?

      I don't really go by how much it rises, I go by how much activity it has.

    Mary, I listened to your Qand A today and I found out what I did wrong with my first starter. I used bottled water from the refrigerator. So now I know it should be room temp or slightly warmer. BTW, your printed version day 5 does not correspond with your video day 5.

    Have you done a video on a simple white sandwich loaf? Been doing it for the kids. Using instant dry yeast because they're not in love with sourdough like me! For some reason, loaf poofs up to mich in the middle, cracks on the sides and too. Probably kneading and folding it wrong? Idk. I'm new at this.

    I am just starting on my sourdough journey. My second try is about 7-8 days old. It is like thick pancake, has a pretty good smell but almost vinegar type. It is not super active. I had made some mistakes, using bleaches AP flour for a day or two then switched to whole wheat. Can I use this to make some bread?

      I think you can definitely try bread. It may not rise as fast because it is a new starter, but, I always say go for it and see. One tip for a new starter is to heat the water to lukewarm in your recipe and it will help the starter get a jumpstart. Good luck!

    What temperature would you suggest as being lukewarm, and is there a certain temperature that your starter should maintain until ready to make bread.

      I would keep it around 100 degrees F. Not over 105. I don't really measure the temperature of my starter. In the winter I like to use either room temp or slightly warm water that is around 98 degrees F. In the summer, I like to use cool (not cold) water because my house is so warm.

      Yes a glass loaf pan works great! I use a Pyrex one most of the time.

      Boo hoo. I put a towel over the loaf of bread to rise and it stuck all over the towel. I scraped it off and let it rest a while longer. When I put it in the oven to bake, there was no rise and it's a flat loaf. 😢 I'm about ready to give up on my sourdough journey. It seems like it rises and spills over the edge instead of rising up. Maybe not enough structure?

    Do you ever do a float test for starter?
    A long time ago I made a regular loaf of bread, not sourdough, with packaged yeast and APF- I ended up feeding it to my goats because it was so dense lol😂

      I don't do the float test. I tried a long time ago and it never floated but it made wonderful bread. My first several loaves were a bust. But, I kept going and finally broke through.

    The sourdough I took out of the freezer about 2 weeks ago I’m having a real hard time getting it to really thrive. It’s kinda gets bubbly then i dump some out feed it then nothing much happens. Some days I’ll just feed it without jumping it out etc. etc. etc. I think maybe I killed it 😮should just get rid of it and open up the other one in the freezer I don’t know what to do!!! Help sour sister!! 😊

      My usual advice in this type of situation is to add a few raisins to jumpstart the fermentation process. You can remove them once it gets good and active. It's most likely in a deep hibernation. It probably just needs a little help waking up. Hope that helps!

    Once I make my starter and put it in the fridge, how much do I feed it before I make pancakes? Do I feed first or use the discard and feed after and use? How much do you feed and how much do I discard? Please help me and thank you. I am at day 5 and my starter doubled after I transferred to a quart jar and fed per your instructions. So I am ready to put it in my fridge and want to make pancakes for my hubby tomorrow.

      So, when you put it in the fridge, you can use it straight from the fridge. My method is to feed my starter 1 cup flour and 3/4 cup water, let it get bubbly, then put it in the fridge. I use the starter for whatever I need straight from the fridge until the jar gets low and it needs fed again. Then I just repeat the process over and over. I don't "discard", I just use from the jar until it needs fed again. For pancakes, you need 1 cup of starter, it does not need to be active and bubbly though. I generally feed my starter once a week and use it throughout the week from the fridge until it needs to be fed. I hope that helps.     What if i had fed my starter an d put in the fridge for several days. I had changed from bubbly to less bubbly and in fact its got a water saperaton? Can i still use my starter to make bread? Just wondering😅 i hope you can help me.

      I have used mine after it gets the liquid on top. I always just use it until it needs fed. It may take a bit longer to rise, but, honestly, I have never noticed a big difference.

      I prefer a glass jar or container with a loose fitting lid. I love the anchor glass containers at Walmart.     Is it normal for the starter to taste really sour like lemons?

      I haven't tasted my starter but the taste will vary depending on where it is in the fermentation process. If it's hungry it will be much more sour. At it's peak it should be pleasantly sour.

    I am following your sourdough starter recipe from 1 year ago. I am on day 3 today and it’s so active coz I live in Dubai and the summers are near 47 degrees so it was super active😮. Fingers crossed I get it right this time as I have tried so many and failed. Thanks for sharing your simple no fuss recipe.

      @@TheRoseHomestead Day 4 my happiness was short lived. There was no activity, just a little layer of water. Did my starter die? I decided to feed it again in the evening. Fingers crossed it will rise again. Will keep you posted.

    I’m on day 8 and I’m making my sourdough. I have been discarding and adding and it has bubbles in the morning there’s likes water on top.please help what do I do? Thank you 🙏 😅

      If it is bubbly and has a pleasant smell like yeast, it's ready to go. I would put it in the fridge after it gets bubbly after a feeding and start using it. The water on top is normal. It just means it ate all the flour and is hungry for more. Hope that helps!

      It really depends on how much you use it. I feed mine 1 cup flour and 3/4 cup water. I do this 1-2 times per week and I make bread or bread products about 3-4 times a week. Hope that helps!
