Mangachi is such an inspiration for me. I'm Indonesian and i get married with Korean man and now we live in Indonesia because of my husband's work. First at all i had so many difficulties living with him especially i really dont know how to cook korean foods and then my mom in law trained me all the time. While doing my training time i also visit so many restaurants and watch your cooking video. So finally i got my rythm on cooking. After 5 years keeping my effort to do korean cooking, i feel like cooking is an 'Art'. It makes my husband happy whenever after he reaches at home from work, he finds out his hometown food serves on the table and he definetley feels really happy. Dear +Maangchi, I did this recipe yesterday for my family. It was a hit my youngest one (2 yrs) loved it so much she was even fishing the green onions out of her soup. My son thought it was cool to make home made noodles!!! we wish you a long and beautiful life (like the noodles :) )
*Broth* - 16 cups of water - 16 cloves of garlic - 1 pound chicken breast - 1 onion, cut in quaters = one hour on high heat - one tsp salt - 2 tsp fish sauce = re-heat *dough* - 3 and 1/2 cups all purpose flour - 1/2 cup starch - tsp salt - 2 tbsp cooking oil - 1 and 1/4 cups water = make one big lump with a wooden spoon, then kneed with hands for around 1 minute +let sit while preparing zucchini = knead for around 2 minutes then cover with plastic = knead again then cover = knead once more (soft texture), roll out and cut in half = knead half separates, roll into thin 18 inch circle, add flour over it and fold over itself + cut *zucchini* - 1 and 1/2 cups zucchini cut into match sticks - 1/4 tsp salt - green onion = squeeze after letting sit = fry with sesame oil in pan and fry for 1 minute on high heat *chicken* mash garlic after boiled + 1 tsp salt + 2 tsp sesame oil + shredded chicken + mix *noodles - cooking* - add to pot and mix gently to seperate - cook on high heat for 3 to 5 minutes - when they float, they are done *to serve* - noodles - broth - zucchini - chicken
@@isabelbarrios3312 If you mean 11:17 she makes it at 4:54 the red flakes are Korean chilli flakes, which is essentially dried chilli flakes. It is called 고춧가루 (gochugaru) can but it from a Korean grocery. She mixes this with sesame oil

Maangchi I did this soup for dinner today, but instead of zucchini I used eggplant and bell pepper, I didn't have the zucchini. It was so delicious, even my kids loved and ate the veggies. Home made noodles are something!!! Thanks for the recipe. I have never used sesame oil before, but to be honest the flavour of this oil is so good. I'll use it in every cooking from now on. When I was little, my mom used to prepare Kalguksu from time to time. She'd prepare the ingredients, the dough and my dad would help with the kneading as it required strength. My little brother would help with the rolling part as he thought it was fun, I did that as well (not due to fun but just to help).... This video brought me some beautiful memories of childhood. @@maquia_drafts I don't really know an exact substitute for zucchini, but I used some cabbage, onions and carrots. I sauteed them just like in the video, and it turned out nice
I made this for my Dad's birthday, and OMG IT WAS SO GOOD (unfortunately, the day after, my mom wanted to eat the leftovers and ended up burning the pot...) Some of my own changes: I used chicken thigh. USE CHICKEN THIGH! It says breast in this recipe, but honestly, thigh is so much juicier, and even cheaper as well. I didn't notice she removed the onion, so I ended up mashing together the ONION with the garlic, AND IT TASTED AMAZING. Did not add Zucchini. (Cause I couldn't find it and was too lazy) Did not make noodles from scratch (got it from a nearby K-Market at least)
FloraTheExplorer Yeah, thigh might give more richness to the soup as it has more fat than breast and juice also comes out from the bones. It is nice that you develop things into your own.
It is a traditional Algerian dish also in the same way, only we use wheat flour instead of flour, and the broth is seasoned and hot. Thank you for this wonderful recipe.

Hi Maangchi! I tried this recipe and the noodles turned out really good :) I made it with whole wheat flour to make it a little healthier. I have made this chicken noodle soup twice now, and thoroughly enjoy it. Today's noodles, however, I decided to make egg noodles. Both taste really good, but I must admit the way you make noodles is easier to make and a chewier texture, which I really adore. Now I have to work on making thinner noodles. I need to practice more making noodles. Thank you for introducing this dish. I grew up eating a lot of soups and stews. Now I can explore more Korean cuisine.

That garlic 'flavor base' looked amazing and I will keep that in mind for other applications. I bet with 'roasted' garlic and all the other same ingredients would be delicious too. you are so fun to watch!
This is an excellent way to start making your own noodles. They need no special equipment or ingredients, and the results are really great. If you make these for friends, you can tell them you made the noodles from scratch, and they will be amazed, because noodle making seems to be so inaccessible to the home cook. Give them a try! I always keep some chicken stock in the freezer, and so I make noodles while the stock is thawing and heating up. I then put fresh chicken and vegetables (frozen 'stir fry mix' from Walmart) into the stock to cook. After cooking, take out the chicken and vegetables, and put noodles into the hot stock and boil it to cook. Then I return the chicken and vegetables, add soy sauce, sesame oil, a bit of sugar and maybe a dash of Sriracha. It is a very filling noodle soup.

I love watching maangchi's videos... its hard to find the same ingredients in the US from when I moved away from korea.. I always miss my moms cooking and maangchi's recipes help me get close when I cant find the right ingredients

Hi Maangchi! I tried this recipe and the noodles turned out really good :) I made it with whole wheat flour to make it a little healthier. My father said the texture is even better than the restaurant we usually go to! The stock was great too, I boiled it for 2-3 hours. I wish I made more. Thank you so much for your recipe ❤️

I have made this chicken noodle soup twice now, and thoroughly enjoy it. Today's noodles, however, I decided to make egg noodles. Both taste really good, but I must admit the way you make noodles is easier to make and a chewier texture, which I really adore. Now I have to work on making thinner noodles. I need to practice more making noodles. Thank you for introducing this dish. I grew up eating a lot of soups and stews. Now I can explore more Korean cuisine.

It’s such a comfort food, I made it for the first time following maangchi’s recipe but instead of all purpose flour, I used soba which turned out pretty good, tbh I didn’t except it to turn out this good. 🥰

I have been eating instant noodles my whole life. Never occurred to me that homemade noodles can be made so easily.
This is an excellent way to start making your own noodles. They need no special equipment or ingredients, and the results are really great. If you make these for friends, you can tell them you made the noodles from scratch, and they will be amazed, because noodle making seems to be so inaccessible to the home cook. Give them a try!
I always keep some chicken stock in the freezer, and so I make noodles while the stock is thawing and heating up. I then put fresh chicken and vegetables (frozen 'stir fry mix' from Walmart) into the stock to cook. After cooking, take out the chicken and vegetables, and put noodles into the hot stock and boil it to cook. Then I return the chicken and vegetables, add soy sauce, sesame oil, a bit of sugar and maybe a dash of Sriracha. It is a very filling noodle soup.
