CINNAMON COFFEE CAKE MUFFINS
BAKING INSTRUCTIONS:
▪️ Bake in the oven at 350 degrees F for 9-12 minutes, or until a toothpick comes out clean.
▪️ Let your muffins cool for 5 minutes in the pan, before transferring to a cooling rack to cool for 10 minutes before adding icing drizzle.
INGREDIENTS:
Muffin Batter
▪️ 1 1/2 cups self-rising flour
▪️ 1/3 cup granulated sugar
▪️ 1 tsp cinnamon
▪️ 1/3 cup oil
▪️ 1 large egg
▪️ 1/2 cup milk (I used 2%)
▪️ 1 tsp vanilla extract
Streusel Topping
▪️ 1/4 cup light brown sugar
▪️ 1 tsp cinnamon
▪️ 1/8 tsp salt
▪️ 2 tbsp unsalted butter, cold
▪️ 3 tbsp flour
Icing
▪️ 1/4 cup powdered sugar
▪️ 1 1/2- 2 tsp milk

Hi! I made this twice now. Since I don't have self-rising flour, I followed your recipe on how to make one. The first time is a hit, produced 10 pieces. You followed the recipe but substituted the self rising flour for what?
@@loriealcantar1564the regular, old fashioned way of baking, is measuring 1 1/2 teaspoon of baking powder and 1/4 teaspoon of fine salt to 1 Cup of AP flour if you don't have self rising flour.
SR flour has it already mixed in. I am older and my mother and grandmother taught me how to to bake and cook.
I always sift measured flour into recipes that I make.
Always use flour that is stored airtight or buy a fresh bag and keep it in the proper sealed storage container.
Personally, I use a few different types of King Arthur brand flour.
Bread flour for baking bread, etc..
A fun thing to do is look up why bread flour is different and for which kinds breads. 🙂

I am a beginner, and thanks to your straight to the point and easy to follow along style, it was easy to learn and they turned out great!!! One question: Any thoughts about adding some nuts, whether pecan, walnut, etc?

Can i add instant coffee in this recipe
I've never personally tried that, but if you want to add a coffee flavor, I'd recommend adding 1/8 tsp - 1/4 tsp espresso powder to the muffin batter. Here's one I'd recommend bit.ly/3ZpWRv2
Why is this called a coffee cake then?
I was today yrs old when I found out that coffee cake is supposed to be eaten with coffee
Followed the recipe and they came out slightly dry? Did I over mix? I tried not to… flavor was on point though.
If they came out dry it could be you added a bit too much flour or yes, sometimes overmixing can make muffins more dry/dense. I’d recommend using a food scale next time for measuring the flour or use the scoop and level method. It’s also good to only stir until the flour is just combined and it’s okay if the batter is slightly lumpy. Hope that helps!

No, this recipe uses self-rising flour which already has leavening (baking powder and salt) in it. Hope you’ll give them a try! ❤️

Like most coffee cakes/muffins, it doesn’t have coffee in it, but instead it’s supposed to be ate with a cup of coffee. Sorry for any confusion!
Way to much trouble to get the recipe. The printable one that you posted doesn't even have it. Kinda hard to make something if you don't know how much to add.

You should really clarify that you’re using self rising flour next time… my muffins are already out of the oven and they look like flat pieces of poop. 😢
I’m sorry yours didn’t turn out but I do say it both in the video and it’s listed out in the ingredient list in the description. If you’re using all-purpose flour in baking you always need to add baking powder and salt for it to rise properly.
