This chickpea curry is a creamy and flavorful Indian-inspired dish that combines the wholesome nuttiness of chickpeas with the luscious creaminess of coconut milk.
⭐️ Ingredients
1 tablespoon olive oil substitute your favorite oil
1 large onion chopped
3 cloves garlic grated
1 inch ginger grated
2 teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon turmeric powder
1 teaspoon ground coriander
¼ teaspoon red pepper flakes
3 cans (15 ounces each) chickpeas or 4½ cups cooked chickpeas
1 cup vegetable stock add more if you want a thinner curry
1 can (15 ounces) crushed tomatoes
1 can (14 ounces) coconut milk full-fat
1 teaspoon salt
2 twists black pepper
1 teaspoon garam masala
1 tablespoons sugar optional
Serve it with
1 squeeze of lemon + basmati rice or naan, cilantro, and a dollop of yogurt

Made this last night, it was a huge hit.. had it for dinner then again for breakfast. Made a side chapati and coconut rice and it was a real treat. Just reduce it for longer for intense curry coconut flavour.
I make this meal weekly for my meal prep. It’s extremely cheap. Filling and provides me with energy before the gym

I made this recipe without knowing the measurements and substituted spaghetti sauce for crushed tomatoes, oat milk instead of coconut milk and cauliflower instead of spinach and it still came out Bellissimo which is truly a testament to just how good this dish is!

Glad you mentioned the yogurt in the ingredients because was wondering what the creamy stuff you added at the end was.
I would like to suggest another ingredient. Asafoetida. Adds a different flavour to it and shines especially if you're doing without onion and garlic.
No rice what happened to good old bathura

As someone who can’t get chick peas right and only like hummus, this was perfect!! Even missing the veggie broth and curry powder, it was a hit! It definitely made me a fan of chick peas and I can’t wait to make again.🎉🎉

Well it’s for Westerners to make it since they are not accustomed to the variety of spices
It’s just a really easy option to be honest, I don’t personally eat curry powder, I make masala from scratch (onion and garlic are normally in curry powder). Curry powder is simple and often adds flavour easily, which is good for westerners who aren’t familiar with tempering spices to draw out the flavour.
@@conker9529 us westerners also make curries from scratch.. we’re more than capable of following a recipe… and sometimes we just can’t be bothered
The 'spinach spin' is a great idea .i generally add Fenugreek. Woukd try with spinach

@@brianabeans4549fresh cilantro will not be as potent as coriander powder, but its the next best thing if you cant find the powder at your local grocery store
No you actually can't. Coriander powder comes from grinding coriander seeds, so has a different flavour profile compared to coriander leaves. @@brianabeans4549
I tried this , it turned out super yum!! Never knew chickpeas could taste this better with very less ingredients!! Thanks for this! I added ripe tomato and cooked it until mashed and then added chickpeas and. Coconut milk to it instead of tomato paste.
This was really good. I blended fresh tomato and cooked it before the broth. Yum.

Wud like to add tht chickpea is heavy on stomach/ digestion.... so better to eat it in lunch rather than dinner. Also u can make amritsari chickpea curry which uses indian gooseberry / pomgrenate powder for adding sourness.

We (Indians)don't use too much processed food like the canned items. try soking the channa over night and try to make fresh tomato sause.....its healthier this way

Hands down one of my favorite meals! It was SO delicious. I could eat this everyday. Only thing I did different was: I added fenugreek leaves (per someone's suggestion), added red bell pepper and mushrooms and I didn't add sugar because I love the savory flavor.
I tried it and loved it ..❤❤❤ instead of chillie flakes I added instead smoked paprika as my curry powder was spicy enough👌...amazing...

Use soaked overnight and then boiled chickpeas
Also make tomato paste on your own, believe me these two extra steps will give you authentic flavours.
PS:- There is no Indian curry masala,as per my knowledge so far.

I have now made a double batch twice and it is fabulous!! A HIT with EVERYONE including children! However, I would cut the liquid in half and add it is it's needed, unless you want more of a soup. I didn't like when what I made was called soup because it was going with rice. Easy peasy fix if a thicker consistency is what you're looking for. Love this recipe!

For god sake please don't use coconut milk in all curries. We Indians don't use milk in curries
Yeah it's a specialty of each states and their climate conditions
For eg in South, Orissa and Goa we have lots of coconut trees..
And very hot weather ,so adding sour, imli Kokam,Dahi is good.
For Gujrat and Bengal adding little bit of sugar ,jaggery is goods they are near sea..
