I'm half Italian from Sicily, and I haven't been able to find good cannoli in a long time. The filling is easy. It's the shells that so often are too thick or too hard or heaven forbid made ahead and frozen and then thawed before filling. My uncle came to visit some 30 years ago and picked up cannoli made fresh that morning from a bakery in the Chicago area. OMG. I've measured every taste against that memory, and nothing is as good.

It is amazing how food can make such vivid memories. I need to go back to Chicago for an Italian food tour!
