    Recipe for Tropézienne with Crème Diplomate, a soft and melting brioche, flavored with orange blossom and generously garnished with a creamy vanilla diplomat cream.
    INGREDIENTS:
    For the Brioche:
    -30 g of lukewarm milk
    -10 g of baker's yeast
    -250g of flour
    -30 g of sugar
    -3 g of salt
    -2 eggs (100 g)
    -1 teaspoon of orange blossom water extract
    -125 g of butter
    For the Diplomate Cream:
    -250 ml of milk
    -2 g of gelatin leaves
    -3 egg yolks
    -60 g of sugar
    -25 g of Maïzena (cornstarch)
    -1 tablespoon of Vanilla
    -20 g of butter
    -180 g of whipping cream
    For the Syrup:
    -80 g of water
    -40 g of sugar
    -2 tablespoons of orange blossom water
