I made this and it was absolutely delicious. I don't have a griddle pan but I know I need one now for that crust! I used a slightly different technique that I think can also go a long way to make the sauce: - I used a stainless steel pan to sear, cook, and baste the steaks to desired doneness - I created the sauce using the fond from the pan rather than making it separately - after searing the steaks, I saute'd some mushrooms in pan with butter (obv optional since the recipe didn't call for it) then the shallots to soak up the fond from the bottom of the pan. Continued the rest of the process as instructed. Turned out excellent! Love the recipes here. Very hearty dishes.

Well this was on the table tonight. The sauce was very good. We did what I call a "Poor Man's Surf and Turf" Steak and a Crab Cake. The sauce complimented both steak and crab cake. Thank You.

I'm not a fan of red meat but that garlic sauce - Damn! That will work wonders on grilled vegetables and BBQ'd pork tenderloin cubes or atop that Chicken Burger recipe you posted a few weeks ago.. Grilled flatbread with garlic sauce and topped with red peppers, shredded chicken, and some Asiago grated on top. Thank you Chef for the recipe and inspiration.!

Joel my good Aussie friend, great recipe & ribeye is our fave cut, medium rare. In U.S. there are 8 grades of meat & only 3 are sold for human consumption( the rest go for pet foods, etc..btw your collie is beautiful, name?) Anyway prime is top, then choice, then select, we like dry aged. Garlic is perfect on steak & we like 1&1/2 inch thick with bone-in, here they call them tomahawk steaks( looks like an Indian tomahawk) being Irish I like baked potato & roasted asparagus, seasoned accordingly, cheers mate !
A great recipie. On my side I will add the salt (if it's needed to correct the seasonning) at the end of the preparation of the sauce, not at the beginning. Because Dijon mustard is really really salty by itself and reduce the sauce will increase its salinity. So add or not salt at the end could prevent potential "accidents" like over reducing the sauce because I tend to forget stuffs on the fire :'D
