About 45mins depending on variables like if it's room temp or out of the fridge. Use a meat thermometer nd bake at 215f until your internal temp reaches 115f for rare, 130f for medium rare, 140f medium or 150 for well done.

I personally like to use red wine or brandy to deglaze the pan when I pair steaks and mushrooms but veal stock is a great idea as well. Yummy.
I (roughly) made this recipe, so here's some points. - maybe medium heat for him, but trying to soar on my medium heat was a failure 😅 (try high heat first) - I didn't have beef broth and used white champignon mushrooms and it turned out well despite all of that - bonus tip, if you're like me and overcondense sauces often, just take a few spoonfulls of the more liquid part into a saucer. It's served me well yet again, and it is always useful when reheating leftover sauces!
They look so gooooood!!!! Some people said not to add the pepper until the end because it will be burnt. Is this true? Should pepper be grind coarse to avoid burning? Great tips, one slight change; I would have reduced the mushrooms first because they are high in water. Once I reduce the mushrooms then I proceed with the sautee of everything else making the sauce adding the reduce mushrooms, that way the water from the mushrooms doesn't interfere with the seasoning process.

Great recipe! I personally wouldn't chop hard herbs like thyme, sage, rosemary etc. It bruises the leaves and becomes quite acidic, rather than a perfume. Just picking the leaves and throwing them in is more than enough
Try using alittle balsamic vinegar in place of beef stock. Alittle goes a long way, so start with a tablespoon, taste it and go from there. It enhances the beef flavor quite well.
Before people ask about how long it went in the oven for, PLEASE INVEST IN AN INSTANT READ THERMOMETER. They are cheap, reliable, and once you have one you'll never undercook/overcook anything ever again, whether it be steak, chicken, fish, or even bread.

I accidentally made this as basically a stroganoff without noodles. Between fresh herbs from my garden and the splash of red wine, it was insane. My 8 month old tried to chug the sauce, she went mad for it!

The thing I like about this is how every meat is angus beef, which means basically anyone can do it! Not like A5 wagyu which is really expensive
Highly recommend deglazing with some white wine before adding the stock and cream.

Butter in, mashroom in, more butter then add Onion, then garlic, unsalted chicken stock, heavy cream, salt. Little thyme in the end

I made this once but I used Marco Pierre whites recipe for the mushroom sauce it was so good

Suggestion, cook the mushrooms in the dry pan to remove the liquid first. Then add your butter.
He did it better by cooking it with half the butter then adding half the butter later after the mushroom empties their liquids
