    Ingredients:
    1 and 1/2 pounds chicken wings
    3 and 1/2 cup of water
    2 star anise
    2 bay leaves
    2 pieces of rock sugar or 1 tsp regular sugar
    4 ginger slices
    1/2 tsp Sichuan peppercorns
    2 tbsp light soy sauce
    2 tbsp dark soy sauce (substitute with light soy if not available)
    2 tbsp Shaoxing cooking wine (substitute with chicken stock if you can't have alcohol)
    1/2 tsp salt

    Hi Ling...love your cooking show! I'm Thai and half Chinese. I cook more Thai food then Chinese. But when I do cook Chinese food it like a treat for me. Your recipe is awesome! I did add dried orange skin and sweet soy sauce. I hope you don't mind I just love the aromas of dried orange skin. xie xie ni🙏

    You are right not to measure everything. Cooking needs Heart, Soul & Knowledge, not measuring. If you know what you need and the amount/ratio, then you learn to cook by feeling and taste. O and thanks now i need to find some ingredients because, i definetly gonna try this

    Just been to my Chinese Restaraunt today it was still half full. The waitress was very pleased to see me. I don't think many European people are going there at the moment. They gave me extra duck. I was only white man there at busy lunch time. I think She is possibly the managers wife or I would ask her to goto movies also she can't speak English 💪

      You may skip soy sauce. Adding more other spices can help in absence of soy sauce.

    The end product you are eating looks slightly browned. Did you any bit fry it after taking out from the broth. The end portion of the video was a little confusing to me. Please clarify. Sorry, you have written no need of frying. I was late to notice it. Anyway you are taking the pieces out while still some broth is left and not fully dried out. Right?

      No frying at all. The picture had a bit effect 😆 Yes, I just took them out of the broth. As I said, you can reuse it. Check out my soy wings, which are browned in the end:

As I mentioned to you earlier in my message I am an English Teacher living in Japan but I am not able to speak Japanese and also I was not lucky enough to learn any type of cooking from any of my grandmothers as they all passed away when I was too little to remember. But recently as part of my many hobbies I have got more and more involved and discovering new dishes which are all 100% natural with very low fat if any and very low calories again if any but incredibly delicious.
