How to make a chewy and moist Butterscotch bars. Here's what you'll need: 1 and ½ cup brown sugar (300g) 3/4 cup unsalted butter (170g) 2 eggs 3 tbsps corn syrup or glucose (45g) 1 tsp vanilla extract (5ml) 2 cups all purpose flour (250g) 1 tsp baking powder (4g) 1 tsp salt (4g) 1/2 cup coarsely chopped walnuts (60g) 1. Preheat oven at 180°C or 350°F. 2. In a pan, cook together brown sugar and unsalted butter. Keep mixing until the mixture starts to boil. 3. When it's boiling, remove from heat. Transfer to a bowl to cool down for at least 10 minutes. 4. When it's cooled. Beat on high to loosen the mixture. 5. Then add 2 eggs one at a time. 6. Beat on high until light and fluffy for 2 minutes. 7. Add corn syrup or glucose and vanilla. Mix. 8. Sift-in together all purpose flour, baking powder and salt. Mix until combined. 9. Fold in coarsely chopped walnuts. 10. Grease a 10x8 inches pan and line with parchment paper. 11. Place the batter. 12. Glucose will not increase the sweetness and is important to make it soft and chewy. and the sugar will not crystallize

1. You probably won't need to add the salt.
2. I wouldn't substitute for the butter. The fat used affects the texture.
