  • Raw Vegan Fermented Sunflower Cheese Recipe!! *
    A few of you have been waiting a while for me to explain how vegan cheeses are made, so i'm happy to finally have completed this video :-)
    The process is simple, yet the science of fermentation is a bit more complicated than an average recipe...i apologize for the less-than-concise explanation here haha. I hope its all still digestible for you.
    I'll post the vegan cheese results assessment in a few days :-)

    Thank you for this experiment! It's interesting how you didn't use any probiotics in these versions but that they still ferment. Also, that it is done in jars in stead of cheese cloth in a mesh strainer which I've seen a lot. I make my coconut yogurt in a jar with probiotics and it gets super fermented and sour quickly, within a few days, so maybe there's something to the jar and letting it breathe on the counter. I've heard that sunflower seeds make a tangier cheese than cashews. Off to do some experimenting now too! :-)

      wife says: yeah the jar retains the moisture: bacteria likes moisture :-) not dry

      wife says: use filtered water to sprout the seeds, then after a couple of days sprouting fill higher with water few cups and leave a day or so and this makes the probiotic water, you can use this is your cheeses and they will ferment

    After making rejuvelac from millett, does the millett still have any nutritional value as a cereal, do you know?

      After it's fermented it would be considered 'Malted Millet' and used similarly to malted barley :-) I'm not sure about how exactly the nutritional qualities change but it will be in 'predigested' form due to the fermentation. So whatever nutrition is in there it should be very bioavailable.

      I use organic raw ones usually but I imagine roasted sunflower seeds would work too

    If American cheese has to be labeled "cheese food" because it's "not cheese", then there's no way on God's green Earth that what this guy is making in a jar should be called "cheese". I consider "cheese substitute" to be the most generous possible label.
