    We have adapted this recipe to be even more nutritious and healthy than ever!.
    Years ago, my family took us all out to Olive Garden, an ltalian restaurant chain, where I had the soup, salad and all you eat breadsticks. The Salad was good, the bread okay, but the soup... OMG!
    I went home and worked on recreating the recipe (this was before I had access to the internet), so after a few tries, I got really close.
    I hadn't made this for years, but dug out my recipe and decided to update it with better, healthier ingredients, so enjoy!
    Now, lower fat, more nutrients and it boosts your immune system and is simply delicious.

    SOUP AS A MEAL! - IMMUNE BOOSTING ITALIAN SAUSAGE & KALE SOUP

    Cook Time: 30 minutes
    Total Time: 45 minutes

    Ingredients:
    2 links (½ pound) of Italian pork Sausage, no casing
    2 slices of turkey bacon, fine chopped
    ½ of a large Red Onion, diced
    1/4 teaspoon crushed red pepper
    1 clove garlic, minced
    3 cups vegetable stock
    1 cup chicken stock
    ½ red potato, sliced
    2 cups Kale, stemmed and chopped
    ¼ cup of dry Non-fat milk powder
    Salt and pepper to taste
    INSTRUCTIONS:
    Using a 2 quart pot, pre-heat over medium heat for 1 minute.
    Add raw Italian sausage in smaller pieces.
    Reduce the heat to low, and cook to draw out the fat. Once all the pink is gone, remove sausage from the pot and drain off all but 1 teaspoon of the remaining fat.
    Add the chopped turkey bacon to the pot, and sauté for 1 minute.
    Add chopped onions and sauté for 1-2 minutes or until translucent.
    Add crushed red pepper and stir. Add garlic and stir again. Once the garlic is fragrant, add the sausage back to the pot.
    Now pour in the vegetable and chicken stock. Simmer for 20 minutes.
    Add the sliced potatoes and simmer for 10 minutes, they will breakup slightly, that's okay.
    Add the chopped Kale and simmer for 5 minutes. Lastly, add the dry milk powder and cook for 1-2 minutes.
    Taste for any needed salt and pepper. Serve hot.

      The portion sizes are about 2 cups each based on the recipes 4 portions. Great question, thanks!
