    BD MONGOLIAN TERIYAKI CHICKEN MADE DIABETIC FRIENDLY!

    INGREDIENTS:
    Teriyaki Sauce
    1 cup of water
    ¼ cup Low Sodium Soy Sauce
    5 teaspoons Swerve brown sugar substitute
    5 drops of Sweet Stevia sweetener
    1 teaspoon Ginger, minced
    2 cloves of fresh Garlic minced
    2 tablespoons Cornstarch
    3 tablespoons of Water
    Mongolian Chicken Stir Fry
    1 tablespoon Vegetable oil
    2 cups of boneless, skinless Chicken thighs, chopped
    ½ large Red Onion (or 1 medium), cut into strips
    2 cloves of fresh Garlic, sliced
    1 green bell pepper, cut into strips
    1 small Carrot or 1/4 cup, sliced into half moons
    2 cups Shitake Mushrooms, cut into strips
    ⅔ cup of Teriyaki Sauce
    INSTRUCTIONS:
    Make the Teriyaki sauce first.
    In a small pan, combine water, soy sauce, sugar substitute, Stevia, ginger and garlic. Bring to a simmer over medium heat.
    Combine cornstarch and water together in a separate bowl, then whisk into the soy sauce mixture.
    Bring to a low simmer or until thickened.
    Set aside.
    For Chicken Stir Fry
    In a Wok or large sauce pan, heat oil over high heat.
    Add Chicken and cook until all the pink is gone.
    Add and stir in Red Onion and cook for 30 seconds.
    Add carrot, and cook for 30 seconds again.
    Add garlic, and cook until just fragrant.
    Add mushrooms and bell peppers. Stir fry until tender, about 1 minute.
    Add teriyaki sauce and stir to combine.
    Serve immediately. Enjoy.
