    In the video we are getting creative with flavors and fusion! We are blending the best of Po'boy sandwiches, pork, asian style flavors and sweet potato! All low carb, high in fiber and nutrients and amazing flavors!
    Traditionally used with chicken, Satay blends peanuts, citrus and soy sauce together for a great flavor contrast that goes great with pork and sweet potato. We have adapted this to be diabetic friendly, low carb and zero added sugar. Please see the end of the video for nutritionals and the impact to my blood sugar.     LOW CARB PO' BOY - FUSION FLAVORS & A GREAT DIABETIC FRIENDLY RECIPE FOR DINNER

    INGREDIENTS:
    2 large Sweet Potatoes
    20 ounces Ground Pork
    ¾ teaspoon Paprika, divided
    3 tablespoons of Cilantro, rough chopped and divided
    1 Lime, zest and juice
    3 tablespoons chopped Peanuts
    3 tablespoons Soy Sauce, divided
    ½ head Romaine Lettuce, rough chopped
    1 medium carrot, grated fine
    3 tablespoon creamy Peanut Butter
    INSTRUCTIONS:
    Preheat oven to 425℉.
    Peel the center of the sweet potato(es) lengthwise, then cut 8 large thick slices lengthwise as well.
    Brush each slice with oil, season with salt & pepper, then bake in the oven for 30 minutes.
    Prep and measure remaining ingredients.
    In a large bowl, combine ground Pork, 2 tablespoons of the Cilantro, chopped Peanuts, 1 ½ tablespoons of Paprika, Lime zest and 1 ½ tablespoons of Soy Sauce and mix together. Portion out 4 equal sizer portions to the just larger than the length and width the sweet potato slices. See our video for a great way to make your patties. Set aside.
    For the Satay Sauce, mix together remaining Soy Sauce, Lime juice, Peanut Butter and remaining Cilantro. If sauce is too thick, add a little water to thin it out. Set aside.
    Once your Sweet Potato slices have baked for 20 minutes, begin frying your pork patties on medium high heat for 2 minutes on each side. Keep warm when done.
    When Sweet Potato slices are finished baking, allow them to cool to the point they can be handled, then build your Po' boy.
    Start with 1 slice of potato for your bottom bun, then a pork patty, then some of the Satay Sauce, followed by the lettuce and grated carrot.
    Finish with one more slice of potato for your top bun and enjoy.
