HOW TO SWEET AND SPICY CHICKEN THIGHS
______________________________________________________________
WHAT YOU WILL NEED:
- 8-10 Chicken Thighs (Skin on or off)
- 1/2 cup Butter
- 1/2 cup Ammo Box Hotsauce ( or hot sauce of choice)
- BBQ Rub
- 1/2 Cup BBQ Sauce
- 1/3 cup honey
- 1 tbs dijon mustard
1 tbs apple cider vinegar
STEP #1
To prepare your Sweet and Spicy Chicken Thighs, begin by combining your butter and hot sauce together well. Next inject your Chicken thighs with the hot sauce mixture followed by applying your favourite BBQ rub to both sides of the chicken thighs
SETP #2
With your chicken thighs prepared, get your grill set up for cooking at around 275F. Once your grill is up to temp place the Chicken thighs on the grill and begin smoking with your favourite smoking wood. While your chicken is smoking go ahead and mix together your honey bbq sauce.
STEP #3
Once your chicken thighs reach an internal temperature of 165F open the grill and apply the honey bbq sauce to the chicken thighs. Once the chicken has been sauced place the lid back on the grill and let the chicken thighs cook to an internal temperature of at least 180F. This high temp is so that the thighs have good texture and the skin is more bite through. Also because of the butter injection, there will be lots of moisture still in these thighs.

Brother, I love when you do Pit Barrel vids and this looks awesome! Just did a rack of beef ribs with a CosmoQ rub and sauce that was sent to me from a buddy in L.A. and they rocked!! Even gave my butcher and the staff the 3 leftover ribs and they all rolled their eyes (and used some colourful Quebec language :-) ) because it was so good. Making another batch Sunday for a birthday for my daughter in law.
