reviving my specialized diverge for bike packing | bike check

i know i've been riding fixed gear for the past a couple years, however, i just pulled out my specialized diverge e5 from storage and decided to make some changes to it as well as update a few parts that have been wearing out.
i want to use this bike for more longer distance riding and eventually want to try taking it on a backpacking trip.
today i'm finally taking it out to test out my work. i re-indexed my gears and am re-seating the disc brakes.

What size and type of wheels and tires are you using?
I'm thinking of upgrading my Diverge e5 as well, hopefully soon I can have my bike like yours.

Wheels are 700c 50mm from Superteam that I de-stickered
