  • Nearly 40% of food in the U.S. ends up in the landfill, a problem exacerbating both climate change and food insecurity. But innovative chefs from gourmet eateries to soup kitchens are on a mission to change that. CBS Reports' Adam Yamaguchi dines across America to discover the creative ways chefs transform food waste into trendy eats.

    A point that is often missed is all the land, storage, transportation, processing, time, and labor that goes into *40%* food waste. How much is that true cost in America? This has been an issue for decades. An excellent documentary is *Just Eat It" (free on UA-cam) by a couple that ate "food waste" only for a month. They ended up with so much food they were giving it away! Organic unopened food included. Well worth the watch. We've been able to feed 12 billion people since 2010. Politics, oppression, and capitalism in the name of profit is the problem. Food, shelter, education, and medical care need to be a human right as they are in other countries.

    Thank you for highlighting the chef-based model for reducing food insecurity and waste. La Soupe is such a gem in the Ohio community and we're proud to be a partner with them!

    That is so necessary and needed so much. The one woman who comes every week and gets food for others is an absolute 💯 angel! We need more of the places that do that and also more ways to get it out to the ones that don't have much. Awesome show, kudos to the chef's doing what they are doing!!❤❤

      Be the change you want to see? Maybe there is a local "gleaners" group that wants to help? A church pantry that wants to expand their program into this area? Go for it! What can you lose?

    Thanks for this report! There are also companies that deliver imperfect produce, overstock, and other such foods to customers that would've been trashed otherwise.

    This is such a great idea ! At home wasting food is taboo , if there's leftovers, we organise next day's cooking around them ! Even when shopping, perfect fruit and veg had better be avoided in favor of equally fresh and delicious albeit mishappen ones.

    I worked in a family owned restaurant back in the early 90s. The chef would take last night's left overs and make that night's special. When it was sold out, you were out of luck. Lines, long lines always.

    What about expired foods? Is there a way to safely reuse them?

    • @girlfromthebronxbywayofelb7288
      @girlfromthebronxbywayofelb7288 Рік тому +1

      There's a store in my neighborhood that does an interesting business in products that are approaching expiration dates. A large grocery store would rather not risk getting stuck with expired yogurt, for instance. So they sell it off to him at a reduced cost, then he sells it at ridiculously low prices, like 25cents, 99 cents, etc. That way the products move fast. The only thing I stay away from are the packages of cookies, but fresh produce, yogurt, cheese, etc. You buy what you will eat quickly, not a monthly shopping binge. Totally works, and it's a fun store to go to because something different is coming in everyday!

  • @lah6816
    @lah6816 Рік тому +3

    Doggonit, it's Not "trash" it's food waste. How about calling it No Waste Cooking as us cooks have done for eons. It's just plain Smart cooking and anyone who cares should be informed and maybe learn to cook instead of eating out all the time being lazy. It's much easier to keep a no waste kitchen instead of being food insecure and starving. Why don't kids learn how to feed themselves in school anymore, it's necessary. Good article but the Trash word is so derogatory and will turn people off from trying no waste cooking. You CAN DO BETTER, everyone can.

    They should have celeb hosts to make a contest show about turning imperfect food into interesting menu. This will save climate change. I feel the need to get involved in such projects.
    When I was working seasonal job in November/December , Einstein bagels 🥯 across from my store used to put out the left over bagels for airport employees. I would take as many bags possible, call my friend and took the bagel to the homeless in downtown area. Someday I took it to the local small self service pantry by the library. Once I took it to the donation bin at Albertsons.

      3:50 or so... "Food isn't waste until it's actually wasted"
      While I fully agree that food shouldn't go to waste, I am unfortunately allergic to shellfish while you folks are talking about seafood...
      Even though I'm more than happy to compromise a bit to prevent food waste, how can I be sure that these recycled foods won't cause me an allergic reaction?
