Hi Kristen. I commented on this when I first tried it and it was delicious then. I made way too much and froze some. I defrosted some overnight and just had some. I wondered if it would taste as good. I’m sure it was even better!😁 I added 1 Tbsp of milk to the pan to loosen it up and let most of it cook off. Delicious. Thank you again.
As a student about to go back to uni, you’ve convinced me to buy an instant pot. Your recipes are simple and easy and healthy, really excited to try your homemade coconut yogurt, do you mind creating various vegan alternatives as well? :)
I am so happy to hear you are inspired by my recipes! And yes, I do have some vegan recipes and try to provide vegan options even when making things like Taco Pasta, etc. Here are a few of my favorites to get you started: amindfullmom.com/instant-pot-oatmeal/ Use Instant Pot Quinoa to make: amindfullmom.com/greek-quinoa-salad/ amindfullmom.com/instant-pot-vegetarian-chili/ amindfullmom.com/instant-pot-vegetable-soup/ amindfullmom.com/vegetarian-tikka-masala/ I also love to make rice and top with beans and avocado for a quick, cheap vegan meal.
Just back from shopping for the ingred, Kristen; can't wait to put this together for lunch -- looks great (and soooo easy!) Lookin' forward to the ziti recipe, too. Y'all Be Safe!
2 minutes for me. Cut the cheese by 1/2. My Costco in Washington and Oregon sells a variety of 5 pound bags of cubed cheese for 12.59. They don't have anti-caking agents.
May I add a suggestion to this great meal, I use the sauté function before I put the pasta on to toast some buttered breadcrumbs ( a good knob of butter ) I with bread as I crumb it, as Mac and cheese is traditionally baked in the oven with a crumb topping here in nz, and sprinkle some over each serving.
@@AMindFullMom I bought spirals instead. Thought they were elbows. There was too much liquid and way too much cheese. I really screwed it up somehow. I followed your directions pretty thoroughly I thought. Not you fault. I’m a rookie. Your spaghetti turned out really good
@@TheDpiper Ahh, I would recommend being sure to use a full 16 ounce box if you used a different type of noodle. But even then, it could throw off the ratio a bit.
Did you add the cheese slowly? Did you grate the cheese yourself? I would love to help, but I need a bit more information, as this is not an issue anyone has had.
Preshredded cheese does not melt smoothly, as it is coated in anti-caking agents. To prevent that in the future, I recommend grating the cheese yourself. @@reshiaimlay351
I so cannot wait to try this! Looks absolutely amazing! I'm wondering if this would work well with gluten free pasta.. I'm not gluten free but I have a bunch of bags left over from when I was. I'm guessing the cook time would be similar as it is on the stove. I'll try! Thanks a bunch!!
Hi Emma! I have made this with Barilla gluten-free noodles with success. Other brands I have tried gave off too much starch while they cooked. Let me know how it goes and what brand you used.
@@AMindFullMom I'm here to report that you were right, it did turn out too starchy, however, I just transferred the cooked pasta into a strainer and rinsed, popped it back into the instant pot and continued, which worked out perfectly! I used the Tinkyada brand. I loved the end result, perfectly creamy with the added sour cream, I loved the recipe and will have something to use the rest of my GF pasta with, yay! 💜
You had me up to "white" noodles....I was immediately triggered fainted and woke up yelling RACIST! Kidding...just a little joke for the new gens out there! Great Mac and cheese...I added a little chorizo to mine :)
Maam. I was NOT READY for how delicious this is. Thank you for sharing!!!

Cubed cheese is a great option for this!
Do you know if 3 minutes high pressure and 5 min. Natural release works with small pasta shells?
For small pasta shells, the timing will still work. Medium shells would need 5 minute cook time, 5 minute NPR.
I like my Mac and Cheese more pourable so I use 3/4 cup of milk
It is always best to modify to for your own preferences.
If i want to use a shape of pasta like penne, will it ne the same amount of liquid and cook time?
For penne, I do 4 minutes with 5 minute natural pressure release.
omg this looks SO yummy im gonna make it today!!
Hope you enjoy
if you like your mac an cheese chewy cook for three or four minutes I like mine soft and cheesy, no sour cream
👍🏻👍🏻
Holy moly! This is great. I used habranero chedder, mozzarella, and taco blend. About 3oz of each. It definitely has a spicy kick!
Sounds great! Glad to hear you enjoyed

Great idea!
I made this. I didn’t like it at all
I hate hearing that. Can I ask what about it you didn't like? Are you more of a boxed mac and cheese fan?

Huh.... I've never heard anyone call them noodles....just heard pasta....is it where she lives that they use this maybe?
It very well could be a regional difference :)
Delicious recipe!!! Made with a grandchild going to university. We both loved it. Thx
Wonderful! What a precious thing to enjoy with your grandchild.
Why is mine just a giant ball of noodle and cheese?
Did you add the cheese slowly? Did you grate the cheese yourself? I would love to help, but I need a bit more information, as this is not an issue anyone has had.
@@AMindFullMom I guess I didn’t at it slowly enough. It was all stringy so I added more. I had the pre shredded

I will be making this. I made your oatmeal and shrimp boil in the instant pot and they turned out great. More recipes to try. Delicious

can i just use water?
You can, but it will lack flavor.
So happy to have found your channel! I will be trying many of your recipes in my new pressure cooker. 😊
Hope you enjoy! Please reach out with any questions!
😋 yummy❤😊
So good
delicious...thank you for sharing!

Thanks for the updated recipe! Can I double the recipe and if so do I increase the pressure and or release time?
Hi Cheryl! You can double the recipe but keep the cooking time the same. It will take longer to come pressure. Enjoy!
@@AMindFullMom thanks so much!!
I made mine in the crockpot for this sounds easier
I think you will find it easier! And delicious :)

Any suggestions for those who don't like Swiss?
I don't care for Swiss myself, but it works in this recipe--just a very subtle flavor. That said, feel free to use additional cheddar.
@@AMindFullMom I don't care for Swiss either but I agree..you're only adding a small amount so prob wint won't notice. Can't wait to make this.
