- Time to get the smoke rolling and the beaver meat preserved. I process a couple pounds of beaver meat by slicing it thin then add some seasonings. The meat then heads into the smoker where it can smoke for a few hours. After smoking and drying the final product is a huge success. With this test batch finished I can continue to work through the remaining meat and have a tasty snack to enjoy around camp.

Not fair, you in the wild enjoying nature hunting, trapping etc., smoking meat, making jerky, eating said jerky in front of us while we're stuck in civilized areas...come on man! You really know how to rub it in and I'm not talking about jerky seasoning either... Of course I'm kidding, glad you're sustaining in the wild as it should be, so far I'd say success in the endeavor. You are a man beyond his years! While I can't ask that all young people live in the woods, I do wish for them to learn how the earth is life's true mother and we need to learn from her and respect her. Keep it up, I love watching.
I never thought of beaver as choice meat, but seeing it after it's smoked... you may have me sold haha

😂First off sir, step away from the smoked meat, you are clearly one of those cooks who likes to sample while cooking! That shot of your campsite at the 5:19 mark was just perfect with the smoker working away and the smoke drifting past the tent. Have to say again, I am really enjoying this series, and looking forward to the next instalment!

I am not sure if it is an option, or perhaps you have already considered it. I would have thought a Coypu would be pretty similar to a beaver, if you could get some meat from one for a test smoking. Is that even allowed in France or in your area of the country?

Love your videos a great deal and I have learned a lot. One question - are you not in bear country? If so I would be worried about all that smoked meat smell in and around the tent, especially when asleeo inside at night.
