How to Cook the Best Whole Chickens on the Weber Charcoal Grill

  • In this easy cooking video, I cook 2 whole chickens on my Weber Kettle charcoal grill. I brined these chickens overnight in a solution consisting of 1 1/2 gallons of water, 1 1/2 cups of Kosher salt, 3/4 cups of brown sugar. Then I rinsed the chickens and seasoned them with The Rub by The J Christopher Company. amzn.to/2KhaPt1 The cooking time for these chickens was 1 hour and 45 minutes but cooking times will vary.

      @D Ddd A gas grill is nothing more than an outdoor gas oven. Treat it like that. I have been gas grilling for years after consistently burning the fuck out of everything on charcoal. I'm back to charcoal with some success, but as with everything new, there is a learning curve.

      Charcoal all the way for me too! But...Electric thermometers are science, fyi. Ya know, just like lab-created viruses and how to defeat them. Good luck with your guesstimating food safety, but I will stick to the certainty of digitally delivered internal temps, knowing my family is safe!

      No thermometer , no inside toilets no electricity no automobiles no hot water heaters no refrigerators … evolve already . Nothing wrong with thermometers

      @@bobbycampbell7418 seriously in fact this needs a thermometer, dude said it was on the weber for almost 2 hours. When I do chickens they take about an hour and I know that because I use a thermometer

    I just did this, this past weekend and it was perfect. First time using lump charcoal and I am sold. Way less smoke on start up and seemed to burn really clean and steady.

    Amazing. I tried it this weekend. Standard kettle barbecue. Two whole chickens. I piled up the coal (briquettes) on one side (one chimney worth) and put the chickens on the opposite side. Vents fully open. Let them cook for 45 minutes before turning them over and cooking fir another 45. At this point, turned out my thermometer broke so i just let it cook a little more (15 minutes) and then i cut into one of them to check they were done. And they were, and they were amazing.
    It really is simple like you showed. No need to overcomplicate things. Just a fun easy barbecue and great results! Thanks so much!

    This is a great way to learn how to charcoal grill larger cuts of meat. I have found that two chickens approximate the size of a turkey so it's good practice on a Weber before the holidays! Love the foil liner under the meat, can't really improve on that.

    just did my 2nd chicken with your method and this one is amazing! I like the fact you brine, and I like the fact you don't use probes and all that crap - just let it run full bore for an hour and 45 minutes (although with just one chicken It was done a little quicker). Your statement that you are good at doing these because you've done so many inspired me to use your method and maybe mine will be good too......and it is! thanks TTM!

    Thank you for a straight forward how to video! No one seems to want to give you any idea of how much time is involved! It makes it impossible for a newbie to plan a cook for the meal. I can take the use of the thermometer but still, an idea of the time involved is critical information, that most won't share! So thank You! I just gave you a thumbs up and a new subscription.

    Did this with my smoker, marinated for 2 days was absolutely phenominal.
    Never had a chicken so crispy and moist in my life.

    That chicken looked very tender and your dog certainly approved.. simple description on how u grilled it. I use a weber too. charcoal and wood chunks. Its challenging especially with the bone in. Fun to to try out different methods.. Thank you sir 👍

    I vent over the coals with the thermometer over the food. You really don't need to draw smoke over the food with a kettle grill. Good looking bird!

    When you placed the lid on the smoker you oriented the vent over the chicken, with the thermometer over the coals. I always orient the other way. The vent is over the coals but there seems always to be good circulation inside the wonderful weber dome and the temp reading, as I am writing this, reads 350 F. I love your addition of Sumac, I put some in to my regular chicken rub and am excited for the results. Weber fan from Texas, use a lot of pecan chunks to smoke chicken and pork.

    Interesting choice on a rub-
    sumac: that spice is actually from north east American continent Called Rhus Typhina. The staghorn sumac, it is also called, i was afraid of as a kid. But recently, I found out, that yes indeed it conversely is used more by middle-easterns, more then Americans, for a Turkish restaurant here used to put it in a lamb dish. It Taste like lemon. Sadly, Most people here think that the berries on the stag horn are the poison part of poison sumac, at least I did.

    I'm gonna be doing the same exact thing today. I'm putting some south Carolina gold sauce on em about ten to fifteen minutes before I take em off lol. Having a poor mans feast today. Not much to go with the birds but thankful I got em lol. Awesome job on those birds!

    I agree with a high temp cook,... A lot of people do ribs at 225 but I go 300F,... I think too low a temp actually converts raw to cooked too slowly & pushes moisture out like sweating vegetables.
    A good & simple Brine is Chicken Broth :)
