Pollo asado is one of my all time favorite foods to eat. As a matter of fact I don’t know ANYONE who doesn’t love a perfectly cooked pollo asado. And in this video we’re gonna show you how most restaurants cook it and my favorite way to cook it in the backyard. We’re gonna spatchcock two birds - one with and one without the backbone and we’re also going to split one bird in half, which is the traditional Texas style pollo asado.
Now here’s a pro tip - the secret to perfect cooking is fire control, especially in open fire cooking. And the second pro tip - always use a meat thermometer for perfect, juicy chicken. Don’t listen to the keyboard haters that say they don’t need a meat thermometer for perfect cooking, the reason they’re typing is because they’re still chewing their overcooked dried out chicken! As long as you have a good recipe, good cooking technique and fire, your family and friends will love your barbecue. Now let’s get fired up and grill some pollo asado.
Watching you cook traditional Mex-Tex food, reminds me of my time in the Air Force at Lackland AFB in the early 70's. I whenever possible, I would adventure away from the base and look for authentic cantinas to eat. I really miss the good food. Seeing you cook and learning your methods...I'm going to give it a try here at home!!!

Removing that fat from the Ass end of the chicken really took my spatchcock chicken to another level. I like grilling it over mesquite lump charcoal which I suppose isn’t ideal since it burns so hot, but that one tip helped prevent burning and excess soot. 10/10 great advice ArnieTex
We only use mesquite lump coal in South Texas... while I like the flip flip method at low temp, I prefer the red hot into the fire fast cooking method myself... if you do it right, there will be no juicer chicken around

I find that leaving the backbone in is the most flavorful.
The smell of Pollos Asados Restaurants around where I live is the best. I even have a Molino right behind my house.

When my old man taught me, there were no meat thermometers, other than oversized contraptions to measure the heat in a roast or soup. Keyboards only existed on a typewriter. BTW my Dad made some pretty good grilled/barbequed meat and veggies. Not perfect but always worth eating.
But now that we have technology, wouldn’t it be wise to use it ?

I didn't drink beer like I was going to. I didn't feel like going to the store. I'm assuming I would have had at least 3. I took my time. Stepped outside for a cigarette break a couple times but all in all it was about a 3 hour project for me but it wasn't like it was difficult or anything . Only pictures but everything is pretty organized and labeled although I didn't see any #s on the actual pieces like it shows in the diagrams. Only the screws were labeled. On the cardboard part of the packaging on the back side. I put it together in my living room too. It wasn't supposed to rain today but it's Michigan and I couldn't wait so I put it together in my living room. Without beer but beer would definitely have made it more fun that's for sure. I'm giving this a 5 for easy assembly. I'll update after it stops raining when I can take it out of my living room and cook some food on it. Hope this helps at least for people who think they can't put this together because I did and you can too . And there are extra screws. I got nervous and immediately came here to see if others had the same experience and they have. You're not doing it wrong. There will be extra screws. Be patient. Don't rush it. Drink beer. Happy assembling

I made this chicken tonight on my Weber Kettle and it was some of the best chicken I've ever made! I cooked it over some good lump charcoal with a chunk or two of hickory. I let it cook on the indirect side for about 25 mins and gave it Arnie's flippity-flip technique for the last 10 minutes or so. It was super moist and very delicious - thanks for the awesome video!

Man, I’m 50 seconds in and you are so right about the meat thermometer. I always use mine and have had so many people tell me that I’m “not a real griller” if I have to use one.

There’s just something about a perfectly grilled Pollo Asado a la Carbon that I love. And your video shows it being done right! The church I attended often had 1/2 chicken plate sales. They were so good but then they started doing the 2 quarter legs instead of the 1/2 chicken. I like the way the 1/2 chicken looks better.

I tried the wow seasoning for the first time. Marinated some drumsticks for 24 hours. Threw them on a charcoal fueled grill and it was an amazing flavor. Very delicious
