The brisket is cooking way faster than anticipated and I've been freaking out trying to find a way to hold it for more possibly more than 8 hours. 170 is a bit too high to hold with all the temp fluctuations going to 190 or more, but 145 would be perfect.

I know how to set the cook “temp” I know how to set the cook “time” But what’s the sequence? Would you press Bake, Then set the Bake Temperature, Then press the Cook Time, Then set time aloted? Hi, Doug. Yes, you would set the temperature first and let it preheat. Only set the cook time once you have put your food in the oven, as at the end of the timer, the oven will shut off. Please let us know if you have any more questions. - JB

The set temperature on the display (for example 350) would remain the same, but the internal oven temperature would be warmer/cooler, again, depending on if your raise or lower the Special Feature adjustment, and by how much. @@geappliances , that's really clear as mud. Our GE oven runs cold. In other words, the set temp is too high compared to what the actual temperature is, by about 20 degrees. If we select 350, the actual temperature is around 330. So, do I select a - adjustment or a +? I was guessing - , so the displayed temperature would more closely represent what the actual temp is, but after reading your very confusing reply, now I don't know. Your response seems to indicate you are actually raising the temp of the oven...... In addition, do the increments represent single degrees, or more. Somebody above claimed each "1" equals 5 degrees F. Don't y'all just love when engineers design products, then try to explain how to use them? I should know, I am an engineer.

Fancier is not better. An oven should not have me asking myself if the local collage has a graduate program on how to use an oven. I should not need to go searching for tutorials.

I think if following what this video is about. It's a calibration. So you set this to -20. Then when you bake at 170, it's actually 150 because it's been calibrated down by 20 degrees.

in other words you DO need tools. You NEED a THERMOMETER that tells you if your oven is calibrated correctly (or if its too high or too low). THEN, after you KNOW how many degrees it's off by, you can hit the up/down +/- buttons appropriately. :) (no help here for me)

So when are we getting ovens that let us set 150 or 600 without hacking them already? Why set these ranges for us? Roasts and bbq need lower holds and real bread and pizza needs very hot temperatures. Surely you’ve seen both the cambro or cooler trick, and snipping the lock to bake pizza on cleaning mode.

Seriously, this oven only has a range of temps from 315 - 385? What if you need a different temp outside that range? What idiot designed this piece of junk!?

You need to put a oven thermometer in the oven set oven to 350 and check what the thermometer indicates

It only goes 1-5 and doesn't seam to affect the temp at all...
increments 1-5 counts as 5 degrees each making it the 35f up or down.

I think if following what this video is about. It's a calibration. So you set this to -20. Then when you bake at 170, it's actually 150 because it's been calibrated down by 20 degrees.
Checked with temp probe and this did not work for me...
