This machine is a masterpiece of engineering, and you have, as always, done a masterful job of demonstrating the basics of how it works. I will be especially looking forward to your planned video covering how to dial in a particular roast using this product. Relying upon "fresh roasts" would be a major negative for those of us who have to roast ahead for Winter when we can't roast outside. (I often vacuum saal mine and store in a deep freeze). So we have to make adjustments when brewing in grind size, for example. In less automated machines, there are of course many options to change relevant parameter values, and I presume this machine would have those options and that you'll cover them in subsequent videos. Anyway, GREAT work on this and the proceeding video as always.
What I've been doing for several years is (1) allow roast to stand for about a week to degas, (2) vacuum seal in freezer bags to remove most of the oxygen, (3) store in deep freeze, (4) allow 24 hr at ambient before opening.
