I've gotten an E34 530i V8 myself last year. I'm waiting for the outside temperatures rising a bit to do some work on it as well. Did you take a closer look at the oilpump screws? I've heard that's one of the first things to check on these motors as they tend to just come loose.
Based on my knowledge, it sounds like the viscous fan/fan clutch is stuck, or at least faulty. Because it sounds like its following the rpms instead of slipping, like a workin fan clutch should do. You should replace it either way, cheaper to buy a new one rather than hoping that the fan blades doesnt shatter the cooling system and etc. based on my own experiences😂

I swapped a lot of thing
New fuel filter
New coil & spark plug
Still idle crazy under cold weather
And delay throttle
check for air leaks in the intake system as this is very finicky on this engine
The fun part is finding original parts that should have been changed but somehow haven’t
