Me personally would use a nice mature cheddar that you grate yourself, then put a couple of cheese slices(burger cheese) into the mixture to get closer to the actual Gregg's recipe. And also possibly a teaspoon of mustard.

I really like pasties but the high fat content in the pastry puts me off. Ginsters chicken tikka slice, 30g of fat ! Nope.
