Yellow Squash Casserole

    Recipe:
    Ingredients
    2-3 lb squash sliced thin and cut in half
    1/2 a yellow onion slice thin
    1 egg
    1 can cream of onion soup ( any cream of soup will do)
    1/2 cup Duke's mayonaise
    1/2 cup sour cream
    8 oz shredded cheddar cheese
    seasonings; salt, pepper & paprika (sprinkle on to taste)
    2 sleeves of ritz crackers (1 cup crushed corn flakes works well too)
    1 stick of butter
    1/4 -1/2 cup parmesan cheese (optional )
    Preheat oven to 350 degrees
    Instructions:
    Cut squash in thin round slices & cut those in half, put in bowl and set aside. In a separate bowl mix together all ingredients except crackers/butter. Add to squash and mix together. Pour into a casserole dish. Melt the stick of butter in the microwave. Put ritz crackers or corn flakes in a zip lock bag & use a meat mallet to crush them (a rolling pin will work too) . After creshed, add the butter to the bag. (add parmesan cheese to the topping bag) Make sure all crackers or flakes are soaked in butter & parmesan is mixed around. Pour the crushed butter soaked crackers or corn flakes on top of the squash mixture. Bake with foil for 30 minutes. Remove the foil and continue baking until the top is brown and the casserole is bubbly.
