Baking Memories; Learning how to make Mini Apple Pies and Pumpkin Pie

We had a little fun in the kitchen making mini Apple Pies and a Pumpkin Pie. Alex has been visiting Tulsa Oklahoma in a school exchange program. We decided to video some of our baking fun before she went back to Spain.Opal and Alex made apple pies and later Lucy joined in on the fun. As you can see, Lucy is a whirlwind of eagerness to learn. We made really good pies that day and some wonderful memories. Opal, Lucy and I hope Alex comes back to visit and bake with us again someday!

The pumpkin pie recipe is on the Libby Can. We kept the pie crust simple by using the store bought version.
For the mini apple pies, we used 2 or 3 chopped granny smith and 2 or 3 chopped honey crisp apples. Sprinkle of sugar, cinnamon, little nutmeg & cloves over the apples. Spoon apples into the crust, add 3-4 dollups of butter then made a lattice top & sealed the top to the bottom crust on the edges. Bake at 350 degrees until browned and bubbly. This can also be made as 1 pie instead of minis.
