in so many recipes, less is more. fried rice is such a perfect example! tiny things in it can make the biggest differences such as using day old rice or even complementing it with a fried egg on the side. i LOVE the addition of shrimp paste in your blend, not many people i know wanna go near it because of its pungency but its shocking how much of a difference it can make in a recipe like fried rice. this looks so good man!
Tip - if you can't find the sweet soy sauce, a blend of soy sauce and brown sugar works well. I love Nasi Goreng - one of my favourite dishes! Looks amazing - thank you for sharing!

Hi Joel! I’m Indonesian and I’m so delighted watching this video, especially when you add some details like shrimp paste and fried egg with sambal. I bet your nasi goreng tastes so flavorful. We usually eat it with ‘kerupuk udang’. The softness of rice combines with crisp from kerupuk will make your day better 😆
I love Nasi Goreng! But never tried making it at home. Your simplified version of the dish has inspired me to try it out soon. I can almost smell and taste the dish just by watching this video 😋😋 Thank you so much chef!
That's not simplified, that is nasi goreng! When you use shrimp paste its javanese style fried rice, my hometown! Our base spices are sambal which is contain similar to yours. chillies (any chillies works fine), shallot, garlic, and most importantly those savory shrimp paste! Put salt, sugar and msg if you like. Pound or blender and its done. You can also use sambal as a dipping sauce, blend sambal with tomatoes and a little lime juice so it get a more saucy easy to dip. Everything in your video are spot on! Im happy more and more people spread awareness to our food. Indonesia had tons of dish to offer to the world.
Thanks Alfian, I know there's different versions and most do contain a lot more ingredients, but some are hard to find in Western countries. Love Indonesian food! 👍
Thousand thanks from my deepest heart for uploading this recipe.. I'm Indonesian and I really like to make Nasi Goreng or Fried Rice...there are hundred kinds of Nasi Goreng... Yours is probably the simple one...but it smells good.. I can taste it with my eyes. The only unusual thing in your video is...eating Nasi Goreng with FORK..it will be better if you eat it with spoon... You are really outstanding chef Joel... Best wishes from Indonesia...🙏
Soothing video and perfect tutorial, I’m a fan 😍 As an Indonesian living in Brazil, it is not easy to find shrimp paste (and i’m lazy to make from scratch), most of the times i just ommit the shrimp paste or use fish sauce. And i usually fry the egg first so i’d have less thing to wash. Hope it helps some people who can’t find shrimp paste. Oh and if you have kerupuk udang (shrimp cracker) & acar (pickled of diced cucumber, diced carrot, shallots, chillies) it’ll add more Indonesian flavor to your plate. Cheers!
a pinch of love was added in the making of this video, which is why it looks extra special. Dear Chef, thank you for making my evening! Love from Carlos
It's so great to you have back again Chef Joel🌷 you have brought life to abandoned kitchens.. hope you had a good time in Bali.. I Love these recipes inspired from travels, and Nasi Goreng is one of my favorite dishes, always thought it would take a lot of steps but you cooked it like a wink..you always make it easy, delicious and the best of all.!!
My mother was born on the Island of Java in 1921 and lived there until she was 16. The indigenous people taught her how to cook and make Nasi Goreng. We lived in So. California and went to the Dutch American Store in Dairy Valley (now Cerritos) in the 1960s to buy the imported ingredients. We got salt dried fish, smoked eel, and spices not available in American grocery stores. Thanks for the memories.
Great work, 👏 Chef. Minus the boneless chicken meat, this is the fried rice most mothers in Southeast Asia make for breakfast (if there is leftover rice from dinner) for centuries. It's the basic and most original form of fried rice. Some ikan bilis would make it great. Even scalion is not needed. I never thought I'd see this on UA-cam.
Chef, I truly missed you and Whiskey. I was delighted when I got your notification for this video! The paste you made looks so flavourful! Never heard of shrimp paste before; always something new to learn from you 😊 The presentation of your dish makes it hard to dig in to that beautiful art but I wouldn’t be able to restrain myself!! Though I told you before that rice is not so much good for the health but lets be honest- it's very delicious! And it in someways anyway good for the health! It's just all about the measures!
