4 tbsp dashi stock
3 tbsp soy sauce
1 tbsp mirin
1 tsp light brown sugar
3 large ice cubes - to cool and dilute the sauce OR 90ml hot water for hot bukkake udon
2 portions udon noodles
extra ice to chill noodles quickly

2 pasteurized egg yolk
2 tbsp green onion - green part finely chopped
2 tbsp tempura flakes - agedama/tenkasu
2 tsp fresh ginger - grated
2 tbsp daikon radish - grated
