  • Hi Chad Rosenberg, a principal at Rosenberg & Parker. Many of you know me as Chad about Cheese from the Surety, Wine & Cheese presentations I do for RIMs chapters all over the country. Now as i travel around, invariably I get asked the same question over and over again and that is "What is my favorite cheese?"
    I've tried a lot of cheeses in my life and I love them all, but there is one particular cheese that's withstood the test of time and I have loved her since the day I met her. I mean I loved it since the first time I tried it.
    It's called Epoisses de Bourgogne. It comes from the Burgundy region of France and it's a cow's milk cheese and during the aging process it's washed or rubbed with something called marc de Bourgogne. Marc is a Eau-de-Vie made from grape seeds and skin and this process gives it this incredible intense flavor and smell as everyone in this room can tell you.
    Now this cheese goes great with all kinds of wine from Burgundy like pinot noirs or white burgundys.
