INGREDIENTS
for 2 pan pizzas (40 x 30 cm or around 16 x 12 inches)
flour '0' (pizza flour): 700 g
water: 500 g
yeast: 4 g of fresh or 2 g of dry
salt: 18 g
For the Tomato Pizza Sauce:
tomato puree: 250 g
olive oil: 3 tbsp
fresh basil: a few leaves
salt: to taste
For the Potato Puree Sauce:
yellow potato: 2 cooked and mashed
onion: half
heavy cream: 3 tbsp
whole milk: 500 g
