Gluten free Lemon cake..

  • Hello Everyone,
    Do you ever want to eat something sweet but don't want a sugar overload?
    Craving something zesty and fresh.
    I have just the recipe for you.
    Ingredients
    225g of gluten free flour
    2 tsp of Baking Powder
    4 Large eggs or 5 small ones
    225g of Butter
    150g of dates
    90g of sweetener of choice
    2 tsp of Lemon extract
    2 tsps. of lemon zest
    1 tsp of Vanilla extract
    Pinch of salt
    1) Soak Dates in water for 2 hours or until soft for easy blending.
    2) Add Dates, sweetener and a little liquid from soaking Dates for easy blending. Blend this until smooth
    3) Grate Lemon zest and squeeze about table spoon of Juice.
    4) Mix Lemon juice into date puree and add a pinch of Salt.
    5) Mix Butter until light and slightly airy, add in Date puree and mix.
    6) Add Eggs, Lemon extract, Vanilla extract and Lemon zest
    7) Add Gluten free Flour and mix gently
    8) Bake at 175 degrees Celsius for about 45 min or until clean skewer or knife comes out of cake clean.
    9) Decorate as you prefer.
