LEARN HOW TO MAKE AN EASY VEGETARIAN RAMEN BROTH + QUICK SHOYU RAMEN RECIPE TODAY!
LAY HO MA! I absolutely love a delicious bowl of ramen. Though, what I love more is simply creating ramen differently every time. Join me in this episode and learn how to make a delicious homemade vegetarian ramen broth plus a quick shoyu (soy sauce) style ramen recipe that's light and tasty right in the comfort of your own home. Let's begin
BROTH INGREDIENTS:
1 onion
1 garlic bulb
250g daikon radish
medium piece ginger
3 sticks celery
2 small carrots
1 fuji apple
1 potato
4 cremini mushrooms
2 tbsp avocado oil
4 dried shiitakes
15g kombu
1 tbsp salt
2.5L water
RAMEN INGREDIENTS:
1 1/2 tbsp soy sauce
1 tsp rice vinegar
1 tbsp chili oil ( • NEXT LEVEL Chili Oil R... )
splash of maple syrup
30g oyster mushrooms
20g broccolini
140g ramen noodles
drizzle of toasted sesame oil
1 tbsp plant-based oyster sauce
1 tsp white sesame seeds
1 tbsp chopped green onions
Directions:
1. Finely chop the onion. Slice the garlic bulb in half. Roughly chop the daikon radish. Slice the ginger and finely chop the celery. Roughly chop the carrots, fuji apple, potato, and cremini mushrooms
2. Heat up a large stock pot to medium heat. Add the avocado oil followed by the onions, garlic, and ginger. Sauté for 5-8min
3. Add and sauté the carrots and celery for another 5-8min. Then, add the apple and potato. Sauté for a few more minutes
4. Add the mushrooms, daikon, kombu, salt, and the water. Cover the pot and bring to a boil
5. When the broth comes to a boil, remove the kombu and save for other recipes. Simmer the broth on medium for 1.5-2 hours
6. Carefully pour the broth into a large bowl through a strainer. Do your best to squeeze out the liquid from the veggies. Then, carefully pour the broth into glass jars. Once they have cooled completely, keep them refrigerated and enjoy up to 2-3 weeks (or freeze them)
7. Bring a pot of water to boil for the noodles
8. In a serving bowl, add the soy sauce, rice vinegar, chili oil, and maple syrup. Then, roughly chop the oyster mushrooms and chop the broccolini into bite sized pieces. Roll up a small piece of the cooked kombu and thinly slice
9. Cook the noodles to package instructions (in this case 4min). Stir the noodles occasionally
10. Heat up a nonstick pan to medium heat. Add a drizzle of toasted sesame oil followed by the mushrooms, broccolini, and kombu. Sauté for 3-4min
11. When the noodles are done, strain them out and set aside. Add 2 cups of the vegetable broth to the pot and bring to a boil
12. Add the plant-based oyster sauce and a splash of water to the nonstick pan. Sauté for another couple of minutes
13. Pour the hot broth into the serving bowl followed by the noodles and sautéd veggies. Garnish with white sesame seeds and freshly chopped green onions

What about canning veggie broth? Can you do that and if so how?
The broth itself looks very tasty. Another good eat!
Thankyou for you’re gracious, patient approach. I feel motivated to cook 👩🏼🍳
Pro tip: When freezing veggie broth, measure it out before pouring it into the tray. Once it's frozen take the cubes and put them in a plastic bag, labeling the bag with how much it contains. That will save you having to measure it all out in future. If you have for example, two cups and that turned out to be 16 cubes, and your recipe calls for half a cup of stock, you can easily figure out that you need four cubes, and that leaves you with 12 cubes, or a cup and a half of frozen stock left. It couldn't be any easier.
I use empty beer cans that I cut the top off of. one cup of broth per can.. freeze then put into freezer bags. I never use half a cup of broth..
Life is short to measure by the minute detail. I just fill up my bowl.
Pro tip: If you freeze the jars of broth, leave a LOT of empty space at the top. I learned this the hard way.
@@kellyb8237 Just cold broth from the fridge, eh? To each his own 😁

your videos are such a blast to watch! you seem to actually love what you're doing and not trying to present 70 gadgets we absolutely need in the kitchen. It's about the food and it's presentation and you're so absolutely amazing at that! Thank you, you're really a gem on this platform!
Please point me in the direction of a video that has an unnecessary amount of kitchen gadgets... I'd like to know why this comment is
Will, if I haven't said it lately, you are a rockstar! One of many, many reasons I love your channel is because of the clear and obvious passion you have and the fun you pass along. You really de-mystify so much about cooking these incredibly, flavorful recipes. I have tried many and they are out of this world amazing! I am being a bit greedy this year for Christmas, lol! I've asked my son for the Ramen cookbook and my boyfriend/partner for your "Cook" cookbook, lol! Anyway, thank you Will for always making me smile and making the challenges of cooking something complex a lot easier and accessible by having this channel. Happy Holidays! p.s. is Ramen the Chinese version of Pho? I love them both. ❤😁👍
Such kind words 🤗 It is my pleasure to be cooking together 👨🏻🍳🙌🏻 and what a wonderful gift(s) to ask for 😉 Keep well and happy cooking
Ramen is noodle. Pho is soup
Looks so good 😊 Greetings from Scotland 😊 Have a wonderful day everyone 🌻
👨🏻🍳🙌🏻
I’m in love with the relaxation of this video. I’m going to have a few glasses of wine and make this broth right now.
How was it?
Simple is good! Relaxing is good! Soup is fabulous. Thank you.

Looks tasty and confident 😀
I have to try this recipe next day.
Love your food prep, the music, your voice. Love the way you present this recipe. Well done video. Have saved to make this soon
The music was a nice addition and not too loud.
Awe I wish had those ingredients to make this. I’d go make it now for a late night snack!! Looks so delicious! Great job!!
I am making Ramen broth today, I will be doubling the recipe, eliminating the oil (I will sauté with water) Then when finished process it in my pressure canner into jars. This way it will keep longer and be available when ever I want it! It sounds SOOO good! Oh I will be eliminating the radish too......don't have one on hand and it's an hour to the store to get one.
I was looking for simpler ramen /broth recipe. Thank you so much
That vegan ramen looks amazing. I want some right now! Thanks for the recipe and the nice video😊
This is one of the best broths I’ve ever tried. Thank you.
OMG! Thank you so much! I love it, will try it. You do an awesome job of presenting this delicious dish. Yum
Yum. 2 in 1. Soup for today and vegi broth to save. Nice. Love your style, and all the flavors. Thank you for showing us these great ideas and for mentioning that there's options.
Perfect winter soup

🙌🏻🥳
Thank you for educating us impressive, love it
Amazing , making me hungry, delicious👍👍👍💕💕💕
Wonderful…simple…beautiful meal ! 🇨🇦🇨🇦🇨🇦
Nice Recipies, very nice :O)
When I cook my broth I leave everything to cool over night and strain the veggies out the next day, gives a lot more flavor because everything can soak in the water way longer.
And I put a kitchentowel in the colanderr and squeeze the liquid out - you get more out of the veggies and it's easy because everyhting is cold.
What do you do with the veggies after squeezing all the juices out? throw it or reuse it?
@@ezioauditore1922 For my Broth I use the scraps and peals from the veggies and after cooking the broth the rest goes on my garden compost.
I can't wait to try this.
It looks amazing. I really enjoy your recipes. Very simple and delicious meals. Thank You.

You are my new Bob Ross. Not only are these videos informative, but I actually feel calmer afterwards.
The music so suits the relaxing mode!
Could you do a video on how you use the Kombu later? How long can you store it?
Thanks! 🙏🏼🙏🏼🙏🏼
Love saving the kombu to make salads 🙌🏻 We have a couple previous episodes, this is the most recent ua-cam.com/video/Sb6jTw38tqo/v-deo.html
@@YEUNGMANCOOKING thanks a lot! I‘ll check into it!
I really love your channel.
It's really brilliant.
Can you also make one video on different types of knives
What a great recipe - I'll try it out and cook it tomorrow ... Thanks for that! ... Your videos are always made so beautifully, aesthetically pleasing, very noble and your recipes are so so indescribably delicious! I already have your great cookbook "Vegan Ramen" and I love it very much.
I wanted to ask you if you could possibly list the cookware you use in your videos. Like in this video, for example, the large soup bowl into which you poured the ramen broth from the saucepan - with the sieve insert and the second, slightly smaller sieve insert ... that is really so practical and so beautiful and I would like to buy it. - Thank you in advance for your effort and I´m looking forward to many more of your delicious recipes :)
Your veggie stock is absolutely amazing.
🙌🏻🙌🏻🙌🏻
Love this ..now I'm craving Ramen!
🙌🏻
Relaxing voice
I love ramen noodles. Can you use the veggies from the stock for soup?. Another great video 👌❤️
fantastic!
Cheers! 🥳
Ein sehr schönes Video und ein Koch Vorschlag für einem selbst, das Buch werde ich mir zulegen. Danke für die Anregung.
Fantastic video
Have ordered and downloaded your Vegan Ramen (ebook) and the Cook with Confidence (ebook). They will make a great Christmas gift for my sisters who love cooking. Me, I would have ordered your books but I was afraid it would be stuck in a shipping container for the next year.
Thanks for the amazing video. Can you use a pressure cooker instead?
Just discovered you today through the Singapore Noodles recipe, now I am hooked! Thank you!!!
🙌🏻🥳
look very delicious noodles
I am not vegetarian but I am love your Recipe

God bless you.
Wow more Ramen it must be any day of the week for sure. Lite and healthy. 😮
Magical video. Just watching makes my stomach feel comforted. Thank you.

Yummmm! Need some NOW!
🎉😎🙌🏻
absolutely love the recipe as usual ! do you use the veggies from the broth for another dish or can you use it ? why do you add apple? (it 's special, i haven't seen it before)
How do you utilize the veggies you cooked the broth with? Are they just wasted afterwards?
Great tip to squeeze out veggies
Hi, love the videos. What non stick pan are you using?
This looks extremely delicious. What plant based oyster sauce did you use?
Monday the 13th, you just blew my mind… I’ve been making soup, and ramen for the past 2 months… Never like this…….can’t wait to try this… THANKS SIFU……🙏🤝
Lol I inhabited when you smelt the ginger. I just love ginger💕
"Inhabited"? Like, you physically entered into the ginger root?? Wow..
Wow 🤩 delicious 😋
🙌🏻🥳
This is perfect! I needed to be able to reduce the sodium in ramen so I can still eat it.
New scriber here! I’m so glad I found you bc I’m vegetarian and I’ve been looking for new ideas. You explain things very well!
Welcome and happy to be cooking together 👨🏻🍳🙌🏻
@@YEUNGMANCOOKING thank you! 😁
Wolfberry/goji berries would be a great addition to the broth.
What flavour component do they add to the broth?
I usually add a hint of tahini and bit of tomato paste
Looks scrumptious!!! What kind of ramen noodles do you use? I see all varieties in our local asian store. Not sire which one to pick,
Oh that’s where it’s at! Great recipe. Need to look for plant based oyster sauce. Hope I can find some.
🙌🏻
I wish I had this now!
🙌🏻
Love the cooking videos, so inspiring. Do you have links somewhere to your cookware, strainers, knifes?
It seems affiliate links are deliberately excluded from his descriptions. So you can buy his book to support
What beautiful music is this? 😍🧡
What is the background music....I absolutely love it 💕
Great Wil 😎👍
Ramen is the best ❤️
🙌🏻
I'm not vegan but your recipes are always interesting. Keep it going!!!!
Is it fine if I blender the veggies and add them to the broth mixture or keep them seperate and add later on?
What's the piano song playing while you're cutting the veg? It's beautiful
So delicious ramen. 😋😋
Love from India 🇮🇳
Hope we stay connected 😊😊
Thanks

How are your garlic pods always dry?
I am not a vegetarian, even though veggies and grains are my favorites. I like your recipes. You don't try to make steak or chicken substitutes. You use ingredients that are usually in most kitchens or are affordable. And you make dishes to enhance all flavors.
They’re the best!
