the colour of the cake, turned out not as green, but with a green yellowish mud colour. doesn't look great. How to improve this, to have a good green colour please?
For cakes, grating the butter softens it faster. I normally do this when I need to bake something right away, say a cake or cookies and I forgot to take the butter out beforehand. Saves you time on waiting for the butter to be at room temperature, which most cakes/desserts call for. Hope that helps.
As she said in the above comment : to get rid of the air inside the batter. In my opinion,so that the cake will be even and smooth, without holes forming in the middle.

作为千年潜水的我,这次一定要出来谢谢kathrine。真的想说,这是全网最好的配方,做出了我小时候心心念念的蜂蜜蛋糕。配方是无油,很神奇,但真的是可行,味道非常清爽纯正。另外,面糊过筛和不过筛都试一次,不得不说,过筛的蛋糕气孔更细腻,亲们不必担心消泡,即使消了一点点,但是细腻紧实感不亚于日本长崎蛋糕。
請問無油和面糊過篩,你有照樣做過嗎?是否真好吃?

Can you please tell me why you use bread flour in this recipe? Coz normally we use cake flour for sponge cake. Or maybe this is of different texture?
