Which part of the beef meat you used in this vedio. Because in Chennai no beef butchers are professional enough to separate the parts. For steak. You can go for tenderloin or sirloin part. Tenderness is so important for steak cooking. Ribeye is also good option if you want to try with bone covering. For French steak fry, you can also try the rib portion boneless meat which will be more juicy and soft. Usually in new jersey where I live, local restaurants use eye round pieces and cook with some vinegar etc and make it as look like tenderloin . I have never tried steak in OTG. I use gas oven in home to cook steak. But i feel best flavor and taste for steak comes from pan grilled steak and wood fired heavy heat cooking... Will try in OTG and update you.
Beef always try to make it aged bro. Just buy steak and put it in freezer for a week or two week. After that try cooking it. Also dont use sunflower oil, sesame oil etc. It will make it burn fast. Try keeping fire in low.
