I could sooo relate when you were sitting looking at the gauge during the canning cycle, that was me, and I also got the weighted gauge. Your vintage canner is adorable, and still rocking along.
I did the exact same thing for my canner. I despised watching the guage all the time and being tied to the canner. Love being able to go by sound! Meat is my favorite thing to can although I've never done ground beef yet. Just did 16 pints of raw pack roast beef last night!
You'll enjoy canning ground meat. You have 3 options. (1) Loose ground meat, as in this video. (2) Meatballs that you can use for spaghetti and other noodle dishes. (3) Patties. When I do those, I can those in wide mouth pint jars. (Four per pint, enough for 2 people.) To make the patties I use a wide mouth jar ring. Place the ring on flat surface, top side up. Put ground meat into the ring, loosely packing it. When the ring is full, lift off the ring. Then, brown the patty that fits almost perfectly into a wide mouth jar. Actual fit depends on how much fat removed / how much shrinkage during the lightly browning step. At any rate, using the rings is the best way I've found to shape them. Enjoy adding ground meat to your pantry shelves. Hope you spot some good sale prices soon.

i canned ground meat for the first time this year . Oh did I learn a lot. Failed lids, reprocessed that takes along time after emptying cleaning reheating it worked. And yes within 24 hrs . Tada canned groceries! Happy canning that ground beef!!!!!

A weighted gauge IS a game changer. I also found out my pressure gauge in top of my canner was off about two degrees when I took it to my ag dept. to have it tested. They recommended I replace it. I just bought a jiggler. Now I don't have to worry about watching the gauge on top. I love it.

First of all let me say, I Love, Love, LOVE your canner! The fact that you're still using one of that age is a testament to their durability! And that COLOR! Man would I love to have something besides stainless. Secondly, I just got a weighted gauge for my Presto also and LOVE it. Such a game-changer! Same here, until I got the Presto Adjustable Regulator. Love that thing. Now, as long as I'm within sight and sound of the canner, I can do other things while waiting for processing to finish.
I don’t have as many years canning experience as you but I too have never canned meat before. But this Canuary series has really inspired me. I love the fact that you pre-seasoned the meat. That means it’s ready to go as soon as you open the jar!
Love having this on hand for quick meals. Had a new whole beef on the way so I canned all that was left from the last one. Mine recommended 3 quarts of water in mine all the time.
I was teaching a friend how to can green beans and she broke my pokie joe. Now I use a plastic knife. It works great and does not scratch my jars. Love the video!
My 1st canning project was mincemeat which was a third meat. And that was 35+years ago. It was delicious; I have a long waiting list of persons wanting me to make more. I love the reactions I get when people learn I can meat! I haven't used a lot of spices when canning burger but now I think I will, after watching what you added. I used to sit and stare at the gauge until I learned I could do the jiggler also! Thanks!
I have only used my waterbath canner. This series, with all these wonderful people, have given me a push to attempt pressure canning. So many great recipes, tips and information. Thank you sooooo much for doing this.
I hear ya, that was me as well before I got my weighted fobby thingy. Jiggler. Talking about back breaking up down up down to adjust the flame. Now the jiggler, a soft hula dance and as long as I can hear it, I am good. I still never leave it for an extended time. Great job Patty
This week was the first time I canned ground beef. It met with hubby's approval so it is game on. I chose a jiggler based canner because I didn't want to be married to the stove for the entire canning session. What a game changer! You'll love it.
I haven’t canned meats in 20 years, but started up again. Thanks for calling Presto to verify about replacing the weight with the jiggler. DH got one for my canner but I haven’t used it yet. My stove with my canner has me right next to the stove forever with the old weight.
Your ground beef looks great. So many of us have learned a lot from Canuary and has given us an opportunity to meet other canners. I am really enjoying this month. Now I need to rework my pantry to hold all my filled canning jars.

Thanks for the tips. I especially like the tub you used while filling your jars- that will save time on clean up and carrying jars to the canner in case it's not right next to the stove.
