I've used Pomona Pectin when making peach jam. I like it. I believe the residual calcium water can be stored in the refrigerator but can't remember offhand for how long. I tried the pectin to cut down on the sugar. To that end, I've used the Truvia baking blend sugar (recipes online) for which you can use 1/2 the amount of sugar you normally would. Product tastes fine without an aftertaste.

Oh, this is my favorite way to make jelly/jam! You use the calcium water to solidify your jam. Pomona's pectin is not a typical pectin. Normal pectin is "activated" by sugar, acid, and heat. Pomona's Pectin is activated by the provided calcium powder. It's the reason why you are able to use such a low amount of sugar. You can also freeze the calcium water for later use!
Love plum jam ❤️. Put up about 28 pints a few months back and even made some plum sauce (did not set up as well) and used some of it to baste my Christmas ham and oh, WOW was it a treat.
I see a lot of comments that people don’t know that you can freeze juice to make jelly later. I use fresh fruit when in season but have bought bags of frozen blueberries, bottles of natural apple juice, and bags of frozen blackberries. They work just as good. Don’t be afraid to try. It is so nice to have jams and jellies on your pantry shelf that you made yourself. You’ve got this! Be encouraged.👩🌾💙👍
