How to make Aunt Vicky’s Flitter Jacks

3/4 c self rising cornmeal
1/4 c flour
1/2 tsp salt
3/4 c of water
Approximately 1/2 c of lard
Place lard in a skillet on medium heat and wait until it’s ready to fry. Combine the dry ingredients. Add water a tablespoon at a time until the batter is the consistency of pancake batter. Scoop the batter into the skillet and fry until they are golden brown.
