Basically you need an anaerobic environment for fermentation and that kills your aerobic bacteria in the environment. There still may be bacteria left. What I meant to say is that fermentation does not guarantee sterility. Especially since often bacteria are the fermenters, like Acetobacter or Lactobacillus.
