Coconut Stew Beef TastyTuesdays

  • Learn how to make classic Caribbean Coconut Stewed Beef in this episode of #TastyTuesdays with Chris De La Rosa of CaribbeanPot.com Beef is marinated in herbs and spices, then stewed as done in the Caribbean with golden brown sugar, and braised in coconut milk until fork tender.
    While this recipe is gluten free, we encourage you to go through the entire list of ingredients to make sure they meet with your specific gluten free dietary needs.
    For this stewed beef you'll need...
    4 lbs beef (cubed
    1 heaping tablespoon Caribbean Green Seasoning
    1 teaspoon grated ginger
    3/4 teaspoon salt
    1 teaspoon Worcestershire sauce
    1/2 Habanero pepper
    1.5 cups coconut milk
    1.5 cups water
    2 scallions
    4-6 sprigs thyme
    1 tablespoon ketchup
    1 medium onion
    1 tablespoon veg oil
    1 tablespoon brown sugar (golden)

    I have to say i was skeptical about the coconut milk when i tried this recipe but im happy i went for it. It tastes absolutely amazing! No exaggeration

    ... making my mouth water! On the island of Guam we cook with a lot of coconut milk dishes. Varieties of meat, seafood, & plantanos dishes all cooked with coconut milk. Gonna' try yours out soon...Thanks!

    If you want an alternative to the sugar, coat the beef in a thin layer of cornflour and seal it in a hot pad using an small amount of oil and butter. The flour will make it crisp n sealed, butter has a lower burning temp than oil so browns quicker and gives a rich flavour. Also later on in the cooking process after you add the stock the butter / flour that was used to brown will know help to thicken the gravy without needing to add any more, effectively it’s a Roux.

    First day this video went up I went out and bought all of the ingredients. The beef marinated over night so I just finished creating the stew. It is delicious over rice!!!

    Suggestion Chris, instead of using water to wash out the marinating bowl, use the coconut milk first. Then use as little water as possible to wash out the remnants from the bowl. Great recipe my brother

      Hey. You can get pots like this at your local Mexican/Jamaican/African stores or those one stop shop International store. It’s a cast aluminum iron pots. Amazon should have them too. Sometimes it’s better to just go to a local store and pick it up. Sending love and inspiration to you.

      bellys124 Imusa available at Amazon, Walmart, corner Bodega, Latino and Caribbean food stores.
      FYI this type of pot is wonderful for cooking however scratches fiberglass stoves tops really bad.

      Caribbean green seasoning though very much the same in idea can be made in slightly different ways with various green aromatic herbs and veggies as each islands have their slight variations and with seasoning peppers. The point is not so much which to use, but make the base seasoning in idea with a blend you like.

    Hey Chris, What size of dutchie pot do you use or suggest? Also, where would be the best place to purchase one (i live in canada)?

      Not sure what Chris uses as he may have several sizes like most cooks usually do. But i got mine from on Amazon by IMUSA which I've uses several times now and works quite well though a bit lighter in weight of which i have 2 sizes. A small one for like cooking for one or two at 3.7 Qt and a bigger one for cooking for a few people or family or enough leftovers at 6.9 Qt. Anything above that is fricking huge for like a big ass party cooking. Hope that helps.

    I use tamarind paste instead of Worcester sauce and tomato sauce/tomato puree in place of ketchup. Otherwise, decent recipe, brought back some good childhood memories.

      I searched for a long time to find a good heavy bottom dutchie being from the caribbean myself and cooks allot. I ended up buying 3 different sizes up to 11 qt which is a big dutchie from Amazon by IMUSA. This one was lighter and not as heavy as Island normal dutchie's but i've used it several times now and works quite well enough. It looks quite similar to Chris dutchie, just with a high temp plastic nob on the cover. Hope it helps.

      I have a small one at 3.7 Qt and one at 6.9 Qt from IMUSA on Amazon which i like ad have used. Check the quality if you ever order one and that the cover fits all the way around without any gap spinning the cover. This can be an issue with big pots over 10+ Qt which are huge duchie's. I returned one i had at 11 Qt as the cover didn't fit quite tight and that was a big ductchie.

      exactly.. the 'process' is called stewing and we treat many meats like this. traditionally the stewed beef doesn't have the coconut milk though

    I applaud this video for "coconut beef" because every coconut meat recipe you see on youtube has curry in it.....as you can see....there's a whole lot more recipes with coconut that does not include curry!!!!!
