all i need is coconut milk. so sick of the same old ways of cooking. im so doing this after a quick trip to the store.this looks so good.last week i made a jamaician dish i saw on a jamaican school site.a young girl did a budget carribbean hot dog stew. it came out great.they also talked about browning chicken n stew.i didnt know what it meant till now. ty 4 sharing this recipe.i also knew of spinners, but not using coconut milk.they look so fantastic, i have to try them this way. ty 4 sharing
I enjoyed the cooking lesson very much. I made beef stew yesterday, myself, but the way my mom cooked--her folks were from Canada. Yours is on a whole different level! I'm going to try it your way, next time.

I was not successful however with the dumplings only because I didn't have all purpose flour, but had and used only coconut flour. Well, that does not gather into a dough alone, but with some doctoring with baking powder I was able to gather it but it disintegrated into the gravy, which however, gave it a hearty texture and still tasty! My husband liked it so much he was desiring the Asian red peppers to go with it, which we didn't have, but it was good all the same; thank you!

He is using an authentic Caribbean pot. In Puerto Rico we use them too. But yes you are right about the metal on metal micro shavings. As long as you try this recipe out..... is all good!!
trinis and some small islanders tend to burn the sugar till black for a darker colour but if you are not used to the taste of that (like Jamaicans for example) use browning (a biproduct of sugar used in baking) or use dark soy sauce and fry down the meat till brown before adding the liquid. same effect but better taste

I love coconut dumpling. I use a couple table spoons of coconut oil and that deepens the flavor.
