I love soba... easily one of the greatest foods on the planet... warms you up in the winter when served hot, cools you down in the summer when served cold. Lots of teriyaki sauce recipes out there... here is mine, I picked it up in Japan from a restaurant in Gunma in the 1990s and it meets with my Japanese wife and her family's approval (her uncle ran a restaurant until his retirement and her cousin was a top sumo wrestler... so I am happy with the recommendations for my recipe). Teriyaki Sauce 3 table spoon Mirin 1 table spoon Sake 3 table spoon light soy 1 table spoon dark soy Nothing else... it really is that simple. You don't need to season the salmon because the soy is salty enough. Don''t need to add garlic - it adds an unnecessary bitterness to the sauce. If you choose to add ginger then you are making shogayaki which tastes good with salmon as well as pork. No need for maple syrup (or honey) because the mirin is sweet enough. No need to marinade it because as you cook the sauce will reduce and become sticky from the mirin and will stick to the salmon (or whatever else you choose to use the sauce with because teriyaki salmon is not so common in Japan). AND... when you baste the salmon with the sauce (keep doing it as soon as you add the sauce until the sauce becomes sticky - doesn't take long to become sticky if you are constantly basting), do so with skin side down. Pointless basting the skin. If you can't get hold of mirin... because it has only just started appearing in regular supermarkets and it can be quite expensive... then you can add a couple of table spoons of honey and increase the sake to 4 table spoons but don't use both honey/syrup and mirin together - it will be too sweet. Note, you can buy cheap Taiwanese clear cooking sake at most Chinese supermarkets... don't use the Chinese brown rice wine (that's great in Chinese cooking but not Japanese cooking) and make sure you get the one made in Taiwan not China. Saves a lot of money on buying the Japanese or American sake and it lasts longer once opened. Obviously in Japan, finding mirin and Japanese cooking sake is not going to be a problem. Try not to use the pre-made teriyaki sauce bottles you see for sale, they tend to be full of vinegar and don't give a true taste. It's not that difficult to make your own and there are many other recipes where you can use sake and mirin, so it won't go to waste if you buy large bottles. If you are not too fussy about cooking for others... then try my gaijin perk... use skinless salmon. Add extra oil and cook one side. It will stick to the bottom of the pan when you turn it over and the bits that stick to the pan will become crunchy... drain the excess oil and add the sauce within 30 seconds of turning the salmon so that it doesn't over cook. Take the salmon out just before the sauce goes completely sticky, use a bit of water to loosen the sauce if need be, but not too much, then scrape the crunchy salmon bits into the sauce and pour onto your rice. Totally not cool in Japan but tastes good.

I love soba... easily one of the greatest foods on the planet... warms you up in the winter when served hot, cools you down in the summer when served cold.
Lots of teriyaki sauce recipes out there... here is mine, I picked it up in Japan from a restaurant in Gunma in the 1990s and it meets with my Japanese wife and her family's approval (her uncle ran a restaurant until his retirement and her cousin was a top sumo wrestler... so I am happy with the recommendations for my recipe).
Teriyaki Sauce
3 table spoon Mirin
1 table spoon Sake
3 table spoon light soy
1 table spoon dark soy
Nothing else... it really is that simple.
You don't need to season the salmon because the soy is salty enough. Don''t need to add garlic - it adds an unnecessary bitterness to the sauce. If you choose to add ginger then you are making shogayaki which tastes good with salmon as well as pork. No need for maple syrup (or honey) because the mirin is sweet enough. No need to marinade it because as you cook the sauce will reduce and become sticky from the mirin and will stick to the salmon (or whatever else you choose to use the sauce with because teriyaki salmon is not so common in Japan).
AND... when you baste the salmon with the sauce (keep doing it as soon as you add the sauce until the sauce becomes sticky - doesn't take long to become sticky if you are constantly basting), do so with skin side down. Pointless basting the skin.
If you can't get hold of mirin... because it has only just started appearing in regular supermarkets and it can be quite expensive... then you can add a couple of table spoons of honey and increase the sake to 4 table spoons but don't use both honey/syrup and mirin together - it will be too sweet. Note, you can buy cheap Taiwanese clear cooking sake at most Chinese supermarkets... don't use the Chinese brown rice wine (that's great in Chinese cooking but not Japanese cooking) and make sure you get the one made in Taiwan not China. Saves a lot of money on buying the Japanese or American sake and it lasts longer once opened. Obviously in Japan, finding mirin and Japanese cooking sake is not going to be a problem. Try not to use the pre-made teriyaki sauce bottles you see for sale, they tend to be full of vinegar and don't give a true taste. It's not that difficult to make your own and there are many other recipes where you can use sake and mirin, so it won't go to waste if you buy large bottles.
If you are not too fussy about cooking for others... then try my gaijin perk... use skinless salmon. Add extra oil and cook one side. It will stick to the bottom of the pan when you turn it over and the bits that stick to the pan will become crunchy... drain the excess oil and add the sauce within 30 seconds of turning the salmon so that it doesn't over cook. Take the salmon out just before the sauce goes completely sticky, use a bit of water to loosen the sauce if need be, but not too much, then scrape the crunchy salmon bits into the sauce and pour onto your rice. Totally not cool in Japan but tastes good.

Ingredients
Salmon:
- 2 cm piece of fresh ginger
- 2 garlic cloves
- 3 tbsp. soy sauce
- 2 tbsp. maple syrup
- 1 tbsp. mirin ( rice wine )
- olive oil
- 4 salmon fillets ( about 500g in total)
- sea salt and freshly ground pepper
Soba noodles:
300g soba noodles
100g kale ( you can also use kalian)
150g sugarsnap peas
3 carrots
2 spring onions
3 cm piece of ginger
1 tbsp. sesame oil
1-2 tbsp. rice vinegar
1- 1 1/2 tbsp. soy sauce
juice of 1/2 lemon
1 sheet of nori seaweed (optional)
sea salt and freshly ground black pepper

ps: I've never eaten a salmon in my life (we cook pork and veal a lot ) but this convinced me to cook it sometime.
